1 eggplant (or) 4 small brinjals
Water to cook the brinjals
Cooking oil of your choice
1 tsp cumin seeds
1/2 chopped onion
2 chopped thai chilis
Salt as per taste
2 tbsp Madras curry powder
150 g Shrimp (or) Prawns
2 tbsp garam masala
2 tsp red chilli powder
2 tbsp yogurt
Fresh or Dried Cilantro/Coriander leaves
The Delish Dish
Now, lets make this deliciously healthy seafood cuisine.
I will walk you step-by-step to making this delicacy.
Start by cooking the chopped brinjals to a mashable consistency.
To achieve this, add the brinjals/eggplants to a pot with some water.
Cook the brinjals until they turn mushy. Keep it aside.
Heat oil in a pan. Add 1 tsp cumin seeds. Once the seeds are slightly roasted, add the chopped onions. The seeds only require a few seconds to be roasted. Add in the onions soon after few seconds to avoid the seeds getting burnt.
Once onions are half cooked, add the chopped thai chilis. I added 1 green and 1 red thai chilli. You can also add 2 green thai chilis instead.
Sprinkle some salt as per your tastebuds' preferences.
Add madras curry powder. Mix it in and let the spices blend for a few seconds.
Add the shrimp/prawns. The small-sized ones taste better for this recipe.
After 1-2 min, add the cooked eggplants.
Then, add the garam masala and red chilli powder.
Once the spices blend, add in the yogurt.
Taste and adjust yogurt quantity as needed.
Once the prawns are cooked, sprinkle the coriander/cilantro leaves and get ready to serve the tasty seafood delicacy :-)
