Scrumptious Leftover Cranberry Bread

So you likely know how to reuse your leftover Thanksgiving turkey in tons of unique and interesting ways. You’ve probably read tons of great ways to reuse your leftover dressing, including my recipes for Juicy Leftover Stuffed Turkey Meatloaf and Leftover Stuffing and Cranberry Cookies. But how do you use your leftover cranberries and/or cranberry sauce?

It sounds silly to include your cranberry sauce with every meal. It just doesn’t go as well as a side with your hamburgers, parmesan chicken, or pot roast, as it did with your Thanksgiving or Christmas meal. However, using cranberries in your baked items adds just the perfect sweetness and flavor to help you enjoy the holiday season and prolong the feeling of the holidays a little longer.

If you need some inspiration, Cranberry Cookies, Cranberry Bread, cranberry muffins, cranberry pancakes, cranberry waffles, and even cranberry scones to eat while drinking your coffee, are all wonderful options. Get creative with them though. Toss in raisins, nuts, dried fruits, or even chocolate chips to liven them up.

There’s no reason to throw out your leftover cranberries just because you couldn’t possibly eat them with another dinner dish. Try out this great recipe for leftover cranberry bread and you’ll be glad you did!

Serves about 12 people 1 slice of bread

Ingredients

  • 2 cups whole wheat flour
  • 1 cup coconut sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup real butter
  • 1 large egg
  • 3/4 cup orange juice, (or grated orange peel)
  • 1/2 cup chopped cranberries, (or cranberry sauce)
  • 1/2 cup chopped nuts, (optional)

Instructions

  1. Preheat your oven to 350°F and grease a loaf pan with some coconut oil, or line it with parchment paper.
  2. Add all of your ingredients to a large mixing bowl, dry ingredients first, then your wet ones.
  3. Once everything is mixed together, toss in your nuts if you choose to use them. Fold in until evenly distributed.
  4. Pour the mixture into your prepared loaf pan.
  5. Pop it into the oven and bake for 1 hour and 10 minutes.

The purpose of this recipe is to use leftover Thanksgiving items. If you don’t have leftover cranberry sauce, but instead have leftover cranberries, they would work great too. In fact, if you are simply interested in making some delicious cranberry bread, whip some up with some cranberries.
