Roast lamb chops are a food that I love to prepare

  • First off, roast lamb chops are a food that I love to prepare and eat. As I mentioned in another one of my recent recipe hubs about cooking lamb, lamb is one of my favorite meats to eat.
  • The other members of my family really enjoy eating lamb as well. When roast lamb is on the menu, we know that we are in for quite a treat!
  • The fried rice that I prepare to go with the oven roasted lamb is a very simple and easy fried rice.
  • You can leave this fried rice meatless since you will already be having lamb as your meat or you can add a very inexpensive and easily prepared meat such as chopped hot dog or chopped Vienna sausages to the fried rice just for a little added flavor.
  • The curried potatoes will be like the icing on the cake! These curried potatoes are so rich, creamy and flavorful that you might likely want to eat a second helping of the curried potatoes after the first.

Another recent recipe hub that I wrote about a curried beef with potatoes dish illustrates that I love to cook curried potatoes. I do so quite often.

Lamb with fried rice and slow cooked curried potatoes meal

Preparing this lamb with fried rice and slow cooked curried potatoes meal is a little time consuming but the meal is really delicious. You won’t regret spending some time on the fantastic resulting roast lamb with curried potatoes and fried rice meal that your family will savor.

Here are the steps that you can follow to make this lamb with curried potatoes and fried rice dish that you will surely delight in!:

  1. For example, for a family of four or five and for everyone to get their own nice sized portion of lamb chop as shown in the photo, you might want to purchase two small packages of raw lamb chop meat, each package of lamb containing just under two pounds of lamb meat.
  2. Pre-heat your oven to 400 degrees.
  3. Remove all of the plastic packaging from the lamb meat and wash and rinse the lamb meat well.
  4. Season the lamb meat generously with 3 teaspoons of each of the following:
  • Salt
  • black pepper
  • oregano
  • garlic powder
  • crushed red pepper

Roast the lamb chops in the oven

  1. Arrange the raw seasoned lamb chops on a foil lined baking tray that has been greased with canola oil, add 1-2 tablespoons of water around the lamb chops and place the baking tray containing the raw seasoned lamb chops in the oven.
  2. Roast the lamb chops in the oven at that 400 degrees setting for the first fifteen minutes and then reduce the heat to 350 degrees for the remainder of the time (an additional 1 hour and 15 minutes).
  3. Then turn off the oven, remove the baking tray with the lamb chops from the oven and cover the baking tray with foil. Set aside.
  4. Meanwhile, during the hour and a half that the lamb chops were cooking in the oven, you could have gotten started with the curried potatoes in the slow cooker.
  5. What you will need to do for this is: Wash several raw potatoes (approximately 7-8 potatoes) very well and then peel the raw potatoes and cut them up into big hearty chunks. Place the raw potato chunks in your slow cooker and cover the slow cooker, then plug the slow cooker into the outlet and turn it on high. Let these potato chunks cook in the slow cooker on that high setting for the 1st hour. Then reduce the slow cooker heat setting to low and let the potatoes continue to cook for 2 more hours. Then remove the cover from the slow cooker and add the following to the potatoes, then stir everything well before putting the slow cooker cover back on the slow cooker.:

Curry powder

  • 4 tablespoons of curry powder that has a strong yellow hue. I like to use the brand, Simply Organic curry powder or curry by Morton and Bassett San Fransisco. The ingredients in Simply Organic curry powder are “organic coriander, organic turmeric, organic mustard, organic cumin, organic fenugreek, organic paprika, organic cayenne, organic cardamom, organic nutmeg, organic cinnamon and organic cloves." The Morton and Bassett spices brand curry powder contains “turmeric, fenugreek, coriander, mustard flour, cumin, gingerroot, black pepper, allspice, cayenne and fennel.”
  • 2 teaspoons of salt
  • 1 cup of whole milk (cow’s milk)
  • 1 can of coconut milk
  1. Keeping the heat setting of the slow cooker on low, continue to let the potatoes cook and simmer in the curry sauce for one last hour. Then turn the slow cooker off.
  2. I would like to say again, “meanwhile” during the long intervals of time that you will have while the curried potatoes cook in the slow cooker, you could be preparing the fried rice on the stove top.

Often times, fried rice will be cooked with leftover cooked rice but most often, I like to just prepare a fresh batch of white rice and then follow the steps to turn it into a fried rice.

So, you can cook two-three cups of white rice according to package directions, for this fried rice. When I cook rice, I most often like to use white jasmine rice specifically. Jasmine rice is so tasty. When the rice has been cooked, you can scoop a generous amount of the rice into a cooking oil greased frying pan heating on a medium heat setting:

to which you will add

  • a large washed, peeled and chopped onion,
  • 3 raw eggs that will scramble up,
  • 4 tablespoons of soy sauce (directly on to the rice) ,
  • and optionally chopped up fully cooked hot dog or Vienna sausage as I mentioned before and as is shown in the photo.

Stir your fried rice well

For the fried rice,

All in sections of the surface area of the same frying pan, the eggs can scramble, the onions can carmelize and brown and the rice and chopped hot dog can heat.

Again, the 4 tablespoons of soy sauce should be added directly on top of the white jasmine rice. As the eggs develop a firm texture and are no longer raw, then you can start to stir and blend everything together (the soy sauce covered rice, the chopped onion, and the eggs, and chopped hot dog).

Enticing food

As the enclosed food photo illustrates, the food will all become a very enticing blend that you will be ready to taste pretty soon.

After the white rice has been fully cooked in a pot of boiling water, drained and transferred to the frying pan with the rest of the fried rice ingredients, the fried rice can be ready within just fifteen minutes of being on the stove top on medium setting.

Arrange the various food items beautifully on plates for serving and enjoying!

Lastly, with all of your items (roast lamb chops, slow cooked curried potatoes and fried rice) ready for serving, you can arrange them beautifully on plates for serving and enjoying!
