Ingredients

For the Meatballs:

  1. Grounded Pork: ½ pound or about 250 grams.
  2. Grounded Lamb: ½ pound or 250 grams.
  3. Ricotta Cheese: 1 cup.
  4. Parmesan cheese: ½ cup grated.
  5. Egg: 1 Well beaten
  6. Parsley: Chopped ¼ cup.
  7. Dried Italian Seasoning: 1 Tsp. freshly grinded between thumb and finger.
  8. Nutmeg: freshly grounded, two pinches.
  9. Onion: ¼ cup finely chopped.
  10. Garlic: 3 cloves minced.
  11. Sea Salt: According to taste.
  12. Pepper: According to taste.


For Sauce:

  1. Spaghetti: 1 Pound or 450 grams.
  2. Yellow onion: 1 diced.
  3. Bell Pepper (capsicum): 1 green diced.
  4. San Marzano tomatoes: 1 can 0r 28 Oz crushed.
  5. Olive Oil: 2 Tbsp.
  6. Dried Italian Seasoning: 1 Tsp. freshly grinded between thumb and finger.
  7. Nutmeg: freshly grounded , two pinches
  8. Sugar: 1 pinch.
  9. Sea Salt: According to taste.
  10. Pepper: According to taste.
  11. Garlic: 5 cloves minced.
  12. Parmesan Cheese: For serving.
  13. Red pepper Flakes: 3 pinches optional.

Instructions

  1. Pre heat the oven at 425 F.
  2. Take a large roasting pan and lightly grease it with olive oil.
  3. Set aside.
  4. Take a large bowl and combine all the ingredients for the meat ball.
  5. Use a fork or hands but do not use spoon.
  6. When properly mixed, make small 1 ½ inch bit meat balls.
  7. Place it on the roasting pan and bake it for 18 to 20 minutes till done.

For Sauce:

  1. In a pan on medium heat add oil.
  2. Sauté onions and green bell pepper in it.
  3. Add salt and pepper and cook till onions are translucent.
  4. Add garlic and sauté till you can smell the aroma of garlic.
  5. Add tomatoes and seasoning and cook for couple of minutes.
  6. Add salt, ¼ tsp of black pepper, a pinch of sugar and mix well.
  7. Add red pepper flakes if desired and mix well.
  8. Bring the mixture to simmer.

For Serving:

  1. Remove meat balls from the oven and add one by one in the sauce.
  2. Simmer it for 30 to 40 minutes.
  3. Taste the sauce and seasoning if needed.
  4. Now in a bowl put the Spaghetti
  5. Pour the meat ball mixture over spaghetti.
  6. Add grated parmesan cheese.
  7. Serve hot.

These Ricotta Cheese Meatball I have used Lamb meat because I am Hindu and do not eat beef but if you eat Beef then you can replace Lamb with ground beef. I do not know how it taste with beef but with lamb it does taste excellent.

When I was a kid, I ate a spaghetti brought to us by a neighbor and it was tasty. I was surprised to discover that it wasn't ground pork or beef but chicken -- so a chicken is a good substitute for beef, pork or lamb. Maybe a ground turkey will turn out good as well. Yummy! Your photos make me want to try these meatballs. I would probably use ground beef. I don't see ground lamb readily available where I live. Still, I think the other ingredients would make these meatballs incredible-tasting. Great hub. Voted up and awesome!

I gave this 5 stars because in reading your recipe, I know that it would be excellent. I would use the ground beef instead of lamb although it might be interesting to try the lamb as an ingredient sometime just to taste the difference. Up, useful and sharing.
