Reubens Made into Balls and Deep Fried
Mix ingredients: corned beef, cheese, sauerkraut,cream cheese, thousand island dressing. Add egg, cracker crumbs. Put flour on your hands, and roll into balls. Freeze balls.

My Salad Shooter has been the ultimate cheese grater. Cut the cheese to fit the chute, put them in, press the button. Minutes later, I have a bunch of shredded cheese ready to use in my next adventure with cooking.
Cut Corned Beef into Small Pieces
Squeeze Juice out of Sauerkraut and Add to Cheese/Beef Mixture
Add Cream Cheese to Cheese and Corned Beef
Add Thousand Island to Creamed Mixture
Binder. I need binder. Like an egg, plus some ground up crackers. Like when I make meatloaf. Then, later, I will need a cracker crumb coating for the flour, egg, cracker crumbs coating.
Rye crackers would be good. Rye crackers in the final coating.
I use rice flour to roll the balls in first. Then, I dip in an egg wash of stirred eggs and a couple teaspoons of water.
Then, roll the egged ball in the cracker crumbs.
Deep fry. 3 minutes.
Add Egg to Creamed Mixture, Then Cracker Crumbs, Then Make into Balls for Freezing
Place Balls in Freezer
Frozen Ball, Dip into Flour, Then Egg, Then Rye Crumbs - Then Drop Batch in Deep Fryer
My balls were coated. I did about nine balls. It's better to put them in the basket and then lower them into the oil. It prevents, burns and boil overs. Once in the oil, set timer for 4 minutes.
I checked the temperature of the balls at four minutes, and found the centers were still slightly frozen. Two minutes more melted the centers and the cheese and the temperature was then above 165.
Drain on paper towels. Let cool slightly and eat.
We contemplated eating them with ranch dressing or more Thousand island, but, I ate mine just the way they were.
