Have you actually tried to make these recipes with Splenda? I have translated several Swedish LowCarbHighFat baking books for the English-speaking market and my experience is that you can not make a syrup with Splenda and you are not likely to get a meringue either. I have tried many different sugar replacements and the best where you have to duplicate sugar's quality (not just taste) is a product called Swerve. (No, I'm not affiliated.) It is a mixture of erythritol and Stevia ... and you can make your own mixture from erythritol (health food store or online) and a knife edge of stevia powder.
Buy the usual granular erythritol (they charge more for the finer ground) and whirr it in a blender or coffee grinder to get a fine powder. The fine powder dissolves easier. The mixture of two different sugar substitutes makes the 'artificial' taste nearly disappear.

Splenda is a great substitute for sugar. The only thing that bothers me about my own recipes here is that I think I have put too much Spenda in, so if you save the recipes, use less. Weight by weight, Splenda seems to be at least twice as sweet as sugar.

Amazon.co.uk, .fr and.de only sell individual granule packets as opposed to a 1lb bag and Amazon.com won't ship to here.(probably international food movement restrictions). Anyway it is far too expensive for my budget so I'll just have to keep drooling LOL

You're welcome! I am drooling! I'm on a low carb diet just now and I can't buy Splenda here Spain - and it was only marketed in the UK for about a year before I left.

Thanks OM! I'm back on a low carb diet but I was on one years ago for nearly a year so I know the 'allowed foods' off by heart. Splenda has made a huge difference to the food choices of low carb dieters :)
