Recipe for how to make tasty English muffin breakfast sandwiches
English muffin breakfast sandwiches are convenient, easy to prepare and delicious. Of course, an english muffin breakfast sandwich can potentially have a wide variety of fillings but this particular english muffin breakfast sandwich recipe will discuss using just a couple of simple ingredients for the breakfast sandwich filling: salami and scrambled eggs.
Ingredients
- 1 dozen eggs
- 1 package salami
- 1 package English muffins
- 2 tablespoons cooking oil
- 2-3 teaspoons salt
- 2-3 teaspoons other seasonings if desired
Instructions
- Line a baking pan with foil and lightly coat the foil with cooking oil.
- Place sliced English muffins in the baking pan and gently warm them in the oven.
- Scramble one dozen eggs (and adjust number of eggs for number of people being served, as desired.
- Season the scrambled eggs with the salt and other seasoning such as black pepper if desired.
- Layer salami cold cuts on top of the scrambled eggs and allow the temperature of the salami cold cuts to warm.
- Top the halved English muffins with large spoonfuls of the scrambled eggs and salami.
- ‘Close’ the English muffin sandwiches, covering each bottom half of an English muffin with scrambled egg and salami with the top half of an English muffin.
