Background about this recipe
I bought what I presumed was a boneless pork loin roast. I must have been in a hurry when I was going through the meat department that day, as I did not notice all the cuts that were in the roast. When I defrosted the roast and cut open the bag that contained the meat, I saw that it was cut into eleven sections but not cut completely all the way through. I had been wanting to and make a stuffed pork roast on the barbeque for some time, and thought to myself, okay this is the perfect time to try this. I did not use an actual traditional stuffing. I must say that this did come out pretty tasty for what I did stuff the chops with.

Serves 6-7 people
- 1 large boneless pork roast
- 2 large sweet onions sliced thick
- Green and black olives sliced
- 3 large garlic cloves sliced
- Fresh ground pepper
- 8 wooden skewers
- Start by placing sliced garlic and onion slices into the cut parts of the roast.
- Add as many green and or black olives that you would like.
- Sprinkle with fresh ground pepper.
- Insert wooden skewers.
- This was made on a 3-burner gas barbecue. Turn on the left and right burner to medium. In the center of the barbecue place a foil pan with about ½ inch of water in the bottom. Place your meat in the foil pan.
- Close the lid on the barbecue and cook for approximately 1-½ hours or until meat thermometer reads 160F.
- Remove and place on a dish, cover with foil for ten minutes.
- Serve and Enjoy!

Your a lady after my own heart. I love most things Pork and when I saw this Hub I had to come and taste a sample, I smelled it and now I tasted it and it's so yummy. Thank you for the great treat. Now I just have to go out to the meat store and buy a pork roast to do up as yummy as you have presented here. Of course red wine and pork go beautifully together as I smack my lips and drool.

Yummy! I love the recipe but even better - you just helped me figure out what to get Dave for fathers day! A new grill! He is so hard to buy for - ugh - but we had someone working on the house last summer and they tried to move our grill off the deck. Alone. Didn't go so well za it fell off the deck and broke the wheel off so it's really lopsided:) lol!

Gordon Sorry to hear that the weather does not allow you to BBQ that often. During the spring, summer and fall I love to BBQ. It is always so nice to figure out a recipe for something that you bought by mistake.

What a great idea, and what a clever way to make a success out of a mistake!
You can also make another quick pork stuffing out of bread crumbs, a little milk to moisten, finely chopped onions, a few raisins, and some peeled and diced apples. Season to taste and stuff the same way, securing with skewers.

That sounds delicious. It is amazing what we can come up with when we accidently end up with the wrong ingredient. I am not an olive fan, so I wonder how some dried cranberries would taste in it's place. Great hub - will definately put that on the meal plan for next time.

Sounds delicious, Susan. Wish we got the weather here for barbequing but that doesn't happen often. Isn't it strange how sometimes buying a food ingredient by mistake can lead to a fantastic new recipe being discovered? That's happened to me a few times.
