I have searched the Rachel Ray Everyday website and previously summarized burgers made from ground beef, pork, and lamb. The recipes contained in this article feature Rachel’s ground chicken, turkey, salmon, and tuna burgers, as well as a couple vegetarian burgers. I have summarized ingredients and instructions for these great burgers. You can quickly read through and see which appeal to you. Spanikopita Burgers

Ingredients: Olive oil, butter, chopped red onion, thinly sliced red onion, crushed garlic, frozen spinach, oregano, ground chicken breast (or ground turkey breast), feta cheese, grill seasoning, cucumber, tomato, arugula, pepper rings, lemon juice, crusty rolls, plain yogurt, roasted red peppers, parsley, Calamata olives.

Directions: Sauté chopped onions and garlic. Transfer to large bowl to cool. Thaw and drain spinach, and add to onions and garlic. Add oregano, ground chicken, feta, grill seasoning, and olive oil. Mix, form into patties, and fry in skillet. Make a salad of sliced cucumber, tomato, sliced red onion, arugula, and pepper rings, and dress with olive oil, lemon juice, salt and pepper. Make a spread of cucumber, garlic, yogurt, oregano, and lemon juice in food processor. In cleaned food processor make a paste of red peppers, parsley, olives, salt and pepper. Spread yogurt sauce on toasted roll bottom. Top with burger and salad. Spread olive pepper paste on top bun.

Smokin Chicken Burger

Ingredients: Butter, finely chopped mushrooms, salt and pepper, ground chicken, bacon, thinly sliced onions, chicken broth, red wine, tomato paste, Kaiser rolls.

Directions: Sauté mushrooms in butter, salt and pepper. Transfer in bowl to cool. Add ground chicken, salt, and pepper and form into patties. Cook bacon in skillet until crisp. Reserve 2 tablespoons drippings and sauté onions. I a saucepan reduce chicken broth, wine, and tomato paste. Fry patties in butter. Butter rolls and toast. Top rolls with patties, onions, wine reduction, and bacon.

Chicken Burgers with Barbecue Onion Sauce

Ingredients: Ground chicken, grated Parmigiano-Reggiano or pecorino Romano cheese, garlic, rosemary, fennel seeds, crushed red pepper, allspice, orange juice and zest, salt and pepper, olive oil, pancetta, red onion, bay leaf, balsamic vinegar, honey or brown sugar, Worcestershire sauce, crusty rolls, arugula leaves, endive, radicchio.

Directions: Combine ground chicken, cheese, garlic, rosemary, fennel seeds, crushed red pepper, allspice, orange zest, salt, and pepper. Form mixture into patties, drizzle with olive oil and grill. Cook pancetta in skillet with olive oil until crisp. Add onions and bay leaf and cook with salt and pepper. Stir in vinegar, honey, Worcestershire sauce, orange juice and cook until thickened. Toast rolls on grill. Mix lettuces and place on roll bottoms. Top with patties and onion sauce.

No Joke Spinach Artichoke Burgers

Ingredients: Ground chicken (or turkey) breast, salt and pepper, lemon zest, Parmigiano-Reggiano cheese, garlic, chopped spinach, thyme, olive oil, crusty breast, beefsteak tomato, artichoke hearts, provolone slices.

Directions: Season ground chicken with salt and pepper. Add lemon zest, Parmigiano-Reggiano, garlic, spinach, thyme, and olive oil. Mix and form into burgers and grill or fry. Place artichoke slices on burgers and top with provolone. Continue to cook until cheese is melted. Grill bread and rub with garlic. Top bread with tomato slices. Place burger on bun.

Lemon Poppy Burgers with Napa Slaw and Potatoes

Ingredients: Honey, vegetable oil, lime juice, apple cider vinegar, hot pepper sauce, shredded Napa cabbage, English cucumber strips, red bell pepper strips, chopped scallion, chopped mint, salt and pepper, potatoes, five-spice powder, ground chicken, grill seasoning, poppy seeds, lemon zest, yellow mustard, lemon juice, Kaiser rolls or pita pockets, bibb lettuce, yellow tomato, red onion, sweet pickles.

Directions: Combine honey, oil, lime juice, vinegar, and hot sauce. Add cabbage, cucumber, bell pepper, scallions, mint, salt and pepper. Toss potatoes with five-spice, oil, salt and pepper, and bake until crisp edges. Mix ground chicken with grill seasoning, poppy seeds, lemon peel, and scallions. Form into patties and fry in oil in skillet. Combine mustard, lemon juice, and honey. Place burger on bun bottom. Top with lettuce, tomato, onion and pickles. Spread honey mustard on bun top. Serve with potatoes and slaw.

Indian Spiced Patties with Yogurt Sauce

Ingredients: Ground chicken (or lamb), curry paste, grill seasoning (such as McCormick Montreal Steak Seasoning), ground cinnamon or cloves, cumin, coriander, olive oil, Greek yogurt, garlic, lemon juice, cilantro or parsley, mint, Bibb or Boston lettuce, tomatoes, salt, pita bread.

Directions: Mix ground chicken, curry paste, grill seasoning, cinnamon, cumin, and coriander. Form into patties, brush with olive oil, and grill. Combine in food processor yogurt, garlic, lemon juice, cilantro, and mint. Grill bread. Top or fill bread with patty, chopped lettuce, sliced tomatoes, and yogurt sauce.

Salsa Verde Turkey Burger

Ingredients: Avocado, mayonnaise, garlic, salt, ground turkey thigh meat, salsa verde, Pepper Jack cheese, Kaiser rolls, cilantro, red or green tomatoes.

Directions: Combine avocado, mayo, and garlic, leaving chunky. Combine ground turkey and salsa. Form into patties and fry. Top with cheese. Spread avocado mixture on bottom roll. Top with cilantro, patty, and tomato.

Winter White Burger

Ingredients: Ground turkey, scallions, Dijon mustard, lemon juice and zest, thyme, Bartlett pear, dry white wine, olive oil, sharp white cheddar cheese, hot pepper jelly, extra large English muffins.

Directions: Combine ground turkey, scallions, mustard, lemon zest, thyme, salt and pepper. Form into patties. In a small skillet, add pears, wine, lemon juice, and water. Simmer then transfer pears to plate. In large skillet, cook turkey patties with olive oil. Top with cheese. Spread pepper jelly on muffin bottom. Top with patty.

Turkey Burgers with Zucchini Relish

Ingredients: Ground turkey breast, parsley, grill seasoning, Dijon mustard, poultry seasoning, olive oil, sharp cheddar cheese, chopped zucchini, chopped red bell pepper, chopped red onion, thyme, hot pepper sauce, lime juice, salt, large English muffins, butter, red leaf lettuce.

Directions: Combine ground turkey, parsley, grill seasoning, mustard and poultry seasoning. Form into patties and fry in olive oil. Top with cheese. In small bowl, combine zucchini, bell pepper, red onion, thyme, hot sauce, lime juice, and salt. Toast English muffins and spread butter. Place lettuce on muffin bottom, top with burger and zucchini relish.

Adirondack Red Wing Burger

Ingredients: Olive oil; chopped carrot, celery, onion, garlic, and dill; ground turkey (or chicken), poultry seasoning, salt and pepper, butter, hot pepper sauce, blue cheese, large toasted English muffins, cheddar cheese, shredded lettuce, pickle relish.

Directions: Sauté carrot, celery, onion, and garlic in olive oil. Transfer to bowl to cool. Add ground turkey, dill, poultry seasoning, salt and pepper. Mix, form into patties and fry in skillet in olive oil, remove to plate. Melt butter in skillet, add hot sauce, and return patties to sauce to coat. Top patties with blue cheese and cheddar. Serve in muffin with lettuce and relish.

Turkey Meatloaf Burgers

Ingredients: Butter; chopped McIntosh apple, onion, and celery; salt and pepper, breadcrumbs, ground dark turkey, egg, parsley, Dijon mustard, poultry seasoning, olive oil, sharp white cheddar, cranberry sauce, sour cream, chives, large sourdough English muffins, red onion, red leaf or red romaine lettuce.

Directions: Sauté apple, onion, and celery in butter, with salt and pepper. Stir in breadcrumbs. Transfer to bowl. Add ground turkey, egg, parsley, mustard, salt, pepper, and poultry seasoning. Form into patties, brush with oil, and fry. Top with cheese. Mix cranberry sauce, sour cream, and chives in a bowl. Top muffins with patties, onion, lettuce, and cranberry sauce.

Chipotle Corn Turkey Burgers

Ingredients: Ground turkey, grilled creamed corn, chipotle chile in adobo sauce, cilantro, salt and pepper, vegetable oil, hamburger buns, mayonnaise, romaine lettuce, tomato.

Directions: Combine ground turkey, creamed corn, chile, cilantro, salt, and pepper. Form into patties, brush with olive oil, and grill. Toast buns on grill. Spread mayo on buns. Top with lettuce, burger, tomato, and cilantro.

New England Turkey Burgers with the Works

Ingredients: Butter, McIntosh apple, onion, celery, poultry seasoning, salt and pepper, ground turkey breast, parsley, olive oil, cranberry sauce, orange zest, scallions, large English muffins, Bibb lettuce.

Directions: Sauté apple, onion, and celery in butter with salt, pepper, and poultry seasoning. Transfer to bowl. Add ground turkey, parsley, salt, and pepper. Form patties and fry patties in olive oil. Mix cranberry sauce, orange zest, and scallions. Toast English muffins. Spread muffins with butter and cranberry sauce. Top with burgers, lettuce, cranberry relish, and buttered tops.

Apple Cheddar Turkey Burgers

Ingredients: Ground turkey breast, scallions, parsley, grill seasoning, poultry seasoning, olive oil, Granny Smith apple, extra sharp cheddar cheese, cranberry sauce, grainy mustard, toasted English muffins, red or green leaf lettuce.

Directions: Combine ground turkey, scallions, parsley, grilling seasoning, and poultry seasoning. Form into patties and fry in olive oil. Top patties with apple slices and cheese. In a bowl, mix cranberry sauce and mustard, and spread on muffin tops. Place lettuce on bottoms, and top with patties.

Fried Egg Topped Turkey Burgers with Kale Salad

Ingredients: Kale, red onion, lemon juice, olive oil, salt and pepper, ground turkey, Italian bread, mayonnaise, eggs.

Directions: Toss kale and onion with lemon juice, olive oil, salt and pepper. In another bowl, combine ground turkey, salt, and pepper. Form into patties, and fry in olive oil. Fry eggs. Toast bread Spread with mayo. Top with burger patty and fried eggs. Top with onion slices. Serve with kale salad.

Open Face Turkey Burgers with Potpie Gravy

Ingredients: Ground turkey, chives, dill, parsley, Dijon mustard, salt and pepper, olive oil, butter, shallots, celery, flour, chicken stock, peas, large English muffins.

Directions: Combine ground turkey, chives, dill, parsley, mustard, salt, and pepper. Form into patties and fry in skillet in olive oil. Melt butter in saucepan, and cook shallots, carrots, and celery. Sprinkle with flour. Whisk in chicken stock. Stir in peas. Toast muffin bottoms and top with burger and gravy.

The Rachael

Ingredients: Ground turkey, shallot, parsley, sweet smoked paprika, poultry seasoning, pepper, olive oil, horseradish mustard, sweet pickle relish, butter, pumpernickel or marble rye bread, Swiss cheese, sauerkraut.

Directions: Mix ground turkey, shallot, parsley, paprika, poultry seasoning, salt, and pepper. Form into patties and fry in olive oil. Combine horseradish mustard and pickle relish, and spread on bread bottoms. Top with cheese, sauerkraut, patties, and another slice of cheese. Place bread tops. Butter outside of bread slices and grill sandwiches in skillet.

Cordon Croquettes

Ingredients: Ground turkey breast (or ground chicken or ground pork), celery, shallot, poultry seasoning, paprika, white bread finely ground, milk, egg, Parmigiano-Reggiano, parsley, pepper, baked ham, Fontina or Swiss cheese, dry bread crumbs, olive oil, cranberry sauce or chutney.

Directions: Combine ground turkey, celery, shallot, poultry seasoning, and paprika. In a bowl, combine ground white bread with milk. Squeeze out excess liquid before transferring to meat mixture. Add egg, Parmigiano-Reggiano, parsley, salt, and pepper. Cover work surface with wax paper. Spread half of meat mixture in 8-inch square. Top with ham and Fontina or Swiss cheese. Cover with remaining meat mixture. Seal edges of meat to enclose. Cut into four squares. Coat each patty in dry bread crumbs. Fry patties in skillet in olive oil. Serve with cranberry sauce.

Salmon Delight Burger

Ingredients: Plain yogurt, mint, salt, cucumber, salmon, eggs, vegetable oil, brioche rolls, baby spinach.

Directions: Combine yogurt, mint, and salt in small bowl. In medium bowl, sprinkle cucumber with salt and let stand before draining on paper towel. Cut salmon into small pieces. In medium bowl, beat egg with salt, and stir in salmon. Spoon salmon mixture into skillet in four mounds, and press into patties. Cook turning once. Top each roll with salmon patty, yogurt sauce, cucumber, sliced hard boiled eggs, and spinach.

Salmon Burgers with Dill Mustard

Ingredients: Salmon, capers, lemon juice and zest, parsley, seafood seasoning, salt and pepper, olive oil, cucumber, tomatoes, red onion, Dijon mustard, dill, horseradish (optional), Kaiser rolls, red leaf lettuce.

Directions: Coarsely chop salmon in food processor. Transfer to a bowl and mix in capers, lemon peel, parsley, seafood seasoning, salt and pepper. Form into patties and fry in skillet in olive oil. Combine cucumber, tomatoes, and red onion in a small bowl. In another bowl, combine mustard, dill, and horseradish (optional). Toast roll, then spread mustard sauce and place lettuce. Squeeze lemon over burgers, and place on buns. Top with tomato cucumber relish and Kaiser roll top.

Salmon Cobb Burgers

Ingredients: Canned salmon with skin and bones picked out, breadcrumbs, parsley, egg, Dijon mustard, olive oil, mayonnaise, lemon juice and zest, toasted challah bread, tomato, cooked bacon.

Directions: Combine salmon, breadcrumbs, parsley, egg, and mustard. Form into patties and fry in olive oil. In a small bowl, combine mayo, lemon peel, and parsley. Spread on toast and top with tomato slices, lemon juice, salmon patty, and bacon, and to with toasted bread.

Open Face Salmon Burgers with Honey Mustard

Ingredients: Dijon mustard, honey, salmon, salt and pepper, chives, Old Bay Seasoning, lemon zest, olive oil, butter, sourdough English muffins, cucumbers, red onion, watercress.

Directions: Finely chop salmon in food processor, and transfer to a bowl. Combine mustard and honey in a small bowl. Add salt, pepper, honey mustard, chives, Old Bay Seasoning, and lemon zest to salmon, and mix to combine. Form into patties and fry in olive oil. ButterEnglish muffins. Top with salmon patty, honey mustard, cucumbers, onion, and watercress.

Crunchy Tuna Burgers

Ingredients: Ground tuna, chives, tamari, garlic, pepper, panko breadcrumbs, sesame seeds, vegetable oil, brioche rolls, wasabi mustard or sweet hot Asian mustard, Bibb lettuce, pickled ginger, root vegetable chips.

Directions: Chop tuna in food processor, then transfer to a bowl. Add chives, tamari, garlic, and pepper. Form into small patties. Coat in panko-sesame seed mixture and fry in oil in a skillet. Spread wasabi mustard on roll tops. Place tuna patties on roll bottoms and top with lettuce, ginger and roll tops. Serve with chips.

Tuna Burgers with Ginger Garlic and Soy Sauce

Ingredients: Tuna steaks cut into chunks, garlic, ginger, dark soy sauce, scallions, red bell pepper, sesame oil, grill seasoning blend such as McCormick Montreal Steak Seasoning, vegetable oil, shiitake mushrooms, coarse salt, Kaiser rolls, wasabi mustard such as Stonewall Kitchen, red or green leaf lettuce, mango chutney, pickled ginger.

Directions: Fine chop tuna in food processor. In a bowl, combine tuna, garlic, ginger, soy sauce, scallions, bell pepper, sesame oil, and grill seasoning. Form into patties and fry in skillet in vegetable oil. Sauté mushrooms in another skillet. Spread wasabi mustard on bottom rolls, and top with lettuce, burgers, mushrooms, and tuna patties. Spread mango chutney on roll tops. Serve burgers with pickled ginger, root vegetable chips, thick cut grilled red onion, and oil and vinegar slaw with crunchy fried noodles.

French Tuna Burger with Green Bean Salad

Ingredients: Coarsely chopped tuna steaks, parsley, rosemary, thyme, lemon zest, salt and pepper, green beans, tomatoes, red onion, olive oil, hard boiled eggs, pitted niçoise olives, capers, anchovy filets, crusty rolls, green leaf lettuce.

Directions: Combine tuna, parsley, rosemary, thyme, lemon peel, salt and pepper. Form into patties and fry in olive oil. In another skillet bring one inch of water to boil, add green beans and salt, and cook five minutes. Rinse green beans in cold water and drain. Combine green beans, tomatoes, onion, olive oil, salt and pepper. Top with eggs. Combine olives, capers, anchovies, and olive oil in food processor. Spread olive puree on rolls and top with tuna patties, lettuce, and red onion. Serve with green beans.

Italian Tuna Melt Burgers

Ingredients: Crusty bread slices, olive oil, garlic, tuna steaks cut into chunks, rosemary, grill seasoning, navel orange slices, orange zest, Worcestershire sauce, balsamic vinegar, red onion, Fontina cheese slices, salt and pepper; shredded radicchio, arugula, or baby spinach.

Directions: Brush bread with olive oil and grill. Rub bread with garlic. Grind tuna in food processor. Transfer to bowl and mix in rosemary, grill seasoning, orange zest, Worcestershire sauce, vinegar, and olive oil. Form into patties and grill. Brush onion slices with oil and grill. Top tuna patties with onion and cheese. Top bread with orange slices, radicchio, and burgers.

Vegetarian Burgers

Vegetarian Chickpea Burgers RR Staff

Ingredients: Canned chickpeas, drained; green chiles, parsley, bread crumbs, salt and pepper, egg, vegetable oil, cheddar cheese, hamburger buns, Dijon mustard, ketchup, mayonnaise. Ground cumin, curry powder, &/or cayenne pepper (all optional).

Directions: Pulse in food processor chickpeas, chiles, and parsley. Transfer to bowl and combine mixture with bread crumbs, salt and pepper. Add optional spices if desired: cumin, curry powder, &/or cayenne pepper. Add egg. Form into patties and cook in skillet or grill pan. Top patties with cheese and serve with mustard, ketchup, &/or mayo as desired.

Grilled Mushroom Burgers on Polenta Buns

Ingredients: Shallot, smoked almonds, parsley, sun dried tomatoes in oil, red wine vinegar, Worcestershire sauce, Dijon mustard, olive oil, Portobello mushroom caps, tube of plain or sun dried tomato polenta cut in 16 slices, salt and pepper, smoked mozzarella or scamorza cheese, celery, arugula or spinach.

Directions: Prepare dressing in food processor with water, shallot, almonds, parsley, sun dried tomatoes, vinegar, Worcestershire sauce, and mustard. Drizzle in olive oil. Pour 2/3 of dressing into bowl and coat mushroom caps. Grill mushroom caps. Brush polenta slices with oil and grill to heat. Place mushrooms on polenta and top with cheese and another polenta. Serve with salad made of celery, arugula and remaining dressing.

KK Gals I've used vegetable pulp from the juicer, and you can't even tell it's there. Though I wouldn't mind tasting a bit of vegetable.

What a variety of recipes for burgers here! Particularly like the ones for turkey and salmon but all seem like great diversions from beef. I noticed the chipotle T-burgers have cilantro. That sounds wonderful! It's grillin' and chillin' season, and these recipes seem sure to please. Rated up and shared with others!

These are some of the best recipes ever - what a Herculean undertaking, but such awesome results! I often grind the veggies and cheese with the meat (I actually re-grind the meat with the veggies, etc.) to make the additions less obvious for picky eaters. Super hub, Rose Mary.
