Simple Easy Banana Cake Anyone Can Make
- 1 cup of butter
- 1 cup of sugar
- 1 egg
- 2 cups of self-raising flour
- 2-4 bananas - to taste (Although I sometimes use more as I am a banana freak!)
To make banana cake you will need a cake or loaf tin, just for it to hold its shape. I am now a convert and I use the silicone bakeware, these are floppy containers, but the food always slides straight out of them, there's no greasing, nothing ever sticks or burns and to wash them up you simply rinse them out! I can highly recommend you get some.

Simple Easy Banana Cake: Method
- Put the butter and sugar into a bowl and, cream it off.
- Add the flour and egg.
- Mix it all together.
- Add the bananas, sliced, and mix them in.
- Pre-heat the oven to 180C/350F
- Place the cake mix in a cake tin and bake for about 45 minutes. You can tell it's cooked if you slide a knife into the middle and it comes out cliean: if you see steam on the knife that's perfect as it means the cake is moist, but there should be no cake mixture on the knife.
Just eat it... you don't need me to tell you how! This simple banana cake recipe can be served hot or cold, as a cake, or covered in custard, with ice-cream or your favourite gooey topping!
Storing Your Banana Cake
Once you've cooked your simple banana cake, it can be kept in a cake tin, or lidded container, to keep it fresh. Wait for it to cool down first. You might like to cover it with tin foil or clingfilm, but if it's in an airtight container it'll be fine.
Banana cake will stay moist for 3-5 days if stored in an airtight container.
Can You Freeze Banana Cake?
Why not try slicing and freezing your banana cake - so you can readily take a slice out when you need it and defrost it naturally, or use a microwave to defrost it if you're in a hurry.
If you plan to use your banana cake in lunchboxes, then if you slice it and freeze the slices wrapped up, then you can take the frozen slice out of the freezer and put it into a lunchbox in the morning - and it'll have defrosted by lunchtime and helped to keep the rest of the lunchbox items cool.
If your cake is about a week old - and you really think it might be a little dry, you can always serve it hot (microwaved) with a helping of hot custard over the top.

Yes Georgia - you can mash the bananas. Mash them, slice them, cut them into chunks - whatever you think. They all make a great banana cake.

I just placed the cake mix in the oven and hope I did it right! I added greek yogurt, chocolate candies (M&Ms, Crunch ect) and canned cooking milk, and half a teaspoon of Baking Soda, I also used wheat flour. :) Seems easy enough, hope it taste great too!

It's a standard loaf tin size. So serves 4-12, depending how large your guests are and how hungry they are!

All purpose flour is what we call "plain" and doesn't contain a raising agent. Self-raising contains a raising agent.
So you'd really need to add a teaspoon of baking powder if you use all purpose flour.

making this cake took me about 15 minutes, not even, and it cameout just excellent- all my frineds loved it! accept i changed it up a wee bit, i added some chocolate chips, and i sprinkled walnut shaving ontop of it when serving it.
it was excellent.
