Semolina sweet pudding

This is one quick dish which many of us relish and is easy to make also. It is popular in various countries in different forms but I would be presenting the one that we have so common in India.

Cooking time - 12 to15 minutes.

Quantity - for 2 to 3 persons.

  • Semolina - 3 tbsp.
  • Small sultanas - 8 to 10 Nos.
  • Sugar - as per taste or 1 tbsp.
  • Vanilla essence - 2 to 3 drops (optional).
  • Fennel seeds (Saunf) - 1/2 tsp (optional).
  • Dates - 1 to 2 Nos.
  • Cooking oil - 1 to 2 tsp. (optional).

Wash dates and sultanas and drain out. Chop the dates.

If the oil is not required to be used because of health reasons then take a non-stick pan and keep it on medium heat and pour semolina in it and slowly move with a spatula and about 4-5 minutes it would be roasted and then lower the heat and add some water to make a paste of required consistency so that it has enough water for next 4-5 minutes of cooking. Add sugar, vanilla essence, fennel seeds, and sultanas. Cook in medium heat for another 4-5 minutes and it is done. A little water can be sprinkled in between if it is drying up and sticking to the bottom of the pan.

If the oil is to be used (which many people prefer for relishing the taste of this dish) then heat 1 to 2 tsp cooking oil in a pan and pour semolina in it and saute for a few minutes till it starts giving a little smoke and smell. Then add water and proceed as above we did in the oil-less version.

It is a stand-alone dish but can be had along with bread and boiled eggs for a sumptuous breakfast.

Chop onion, garlic, and ginger. Cut green chilli in 2 or 3 parts. Soak the lentils overnight or at least 6 to 8 hours before cooking.

Heat oil in a pan and pour chopped onion, garlic, and ginger in it. Saute for a few minutes when onions start giving their characteristic smell. Add salt to taste.

Remove the water from the soaked lentil and add the soaked lentils to the pan and saute for 2 to 3 minutes. Soaked lentils take less time in cooking and cook it for another 5 to 6 minutes. Add some little water if it is sticking at the bottom of the pan. One can cook for slightly more time if it is required to be consumed in a softer form.
