Quick and Easy Dinner Recipe: Vegetable Salmon Loaf Recipe

Looking for a quick and easy dinner recipe that pleases everyone and is nutritious as well? Try this great quick and easy dinner recipe for vegetable salmon loaf.

I make several variations of salmon loaf and I also have a great favorite recipe for salmon loaf in the crock pot.

When I'm making salmon loaf the traditional way, cooking it in the oven, I usually try to make it in conjunction with a regular meatloaf, like my quick and easy high fiber meatloaf. I save time and energy by using the same time and temp for the oven, cooking both at the same time side by side.

I even go a step further and bake a couple of medium sized red or Yukon Gold potatoes for 1 or 2 meals and bake a butternut or acorn squash wrapped in foil.

I created this recipe using leeks because I had extra leeks on hand. I think you'll find the combination of leeks, scallions/green onions and carrots go really well with salmon.

You can take this recipe though and create your own version of quick and easy vegetable salmon loaf depending on your favorite vegetables and what you happen to have on hand.  Experiment and see what revamps you can come up with!


Recipe for Vegetable Salmon Loaf

Makes 1 9 x 5 loaf pan filled to the brim of vegetable salmon loaf


  • 1 large can of Trader Joe pink salmon
  • 1 small can of Trader Joe Atlantic salmon
  • 1 cup of Panko bread crumbs
  • 1/2-3/4 cup chopped leeks, more if desired
  • 2 coarsely shredded large carrots
  • 1 egg
  • 1/2 cup (or more) plain Greek yogurt or plain yogurt of choice
  • 3 scallions chopped finely
  • 1 package of Trader Joe Portabello mushroom soup (optional)
  • Vegetable spray


  1. Preheat oven to 350 degrees.
  2. Spray 9 x 5 loaf pan with cooking spray.
  3. Drain off salmon in strainer - mix until broken up and remove any bones.
  4. Combine salmon, Panko bread crumbs, egg, leeks, carrots, yogurt and scallions until mixed well. Mixture should hold together but not be too moist.
  5. If desired, add more Panko bread crumbs or add more yogurt, depending on the consistency of the mixture. The mixture should be the same density as regular meatloaf and hold together nicely.
  6. Turn mixture into loaf pan. Smooth and pat into place to fill with a spoon.
  7. If putting on mushroom topping, spoon Portobello soup over top of the salmon loaf to desired thickness.
  8. If desired, combine the mushroom concentrate with a small amount of milk to thin before putting on top of the loaf.
  9. If you want to flavor the inside of the salmon loaf, use more milk, and poke holes in the top of the salmon loaf to allow the mushroom sauce to permeate some into the loaf or simply add a bit of the portabello mushroom soup to the loaf mixture.
  10. When finished topping the salmon loaf, cover with a piece of foil sprayed with vegetable spray.
  11. Bake in 350 degree oven for 45 minutes or until loaf is just browning on bottom (if using clear loaf pan) or pulling away from the sides of loaf pan. Remove foil and cook 10-15 minutes more or until desired doneness.
  12. Let stand for 10-15 minutes before slicing.

Suggestions for Vegetable Salmon Loaf

This is a great recipe for vegetable salmon loaf but here are some other great suggestions

  • You can use baked and flaked fresh salmon instead of canned salmon
  • Substitute regular bread crumbs or even oatmeal for the Panko bread crumbs
  • Try zucchini of any kind of shredded squash instead of the leeks or for part of the leeks.  You can also just add some in.  Squash is moist like carrots and adds great flavor and texture to the loaf
  • Use egg substitute instead of real egg
  • Adjust yogurt and/or bread crumbs to accommodate any changes you make in the ingredients
  • Use a slightly larger loaf pan if you add more ingredients - 9 x 5 x 4
  • I use diced tomatoes on my meatloaf but I don't use tomatoes on my salmon loaf - some people like it that way though
  • Use soaked thin-cut cucumber slices in a dill sauce or any type of sauce you would use on fish for topping the loaf - cucumbers are a great garnish with the salmon
  • Use any other kind of fish that is dense enough to make a loaf when flaked - I use fresh ahi tuna steaks to make tuna spread and cooked, flaked ahi tuna would be another fish choice
  • Mix in thin sliced mushrooms with the sauce for the topping on the salmon loaf and add a bit of chopped mushrooms to the loaf

Quick and Easy Dinner Recipe: Vegetable Salmon Loaf Recipe

No matter which way you make a salmon loaf, it is a great quick and easy dinner recipe whether it's for a busy weeknight meal or a weekend no-fuss meal.  Salmon loaf is also great for sandwiches, lunches or leftovers.

This recipe is quick and easy but is also nutritious, combining salmon, a fish that is super healthy and rich in omega-3 oils with heart healthy vegetables such as leeks, carrots and scallions.

Vary the vegetables and see what combination suits you best. You can always substitute shallots or bits of sweet onion for added flavor or try grated vegetables such as parsnips, turnips or rutabagas.

Give a thought to conserving energy as well and try and remember to bake your whole dinner in the oven at the same time. It's a really energy efficient way to cook and it's also a super time saver!
