Pumpkin Pancakes for Fall

Fall is here, and that means so are the pumpkins. Here is a beautiful recipe to use after you carve that pumpkin. You can use canned pumpkin, but fresh tastes the best.

  • 2c cold milk
  • 2c pumpkin puree
  • 2 eggs
  • 4 Tbsp melted butter
  • 4 c all-purpose flour
  • 4 Tbsp brown sugar
  • 2 Tbsp maple syrup
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 2-3 tsp pumpkin pie spice
  • 2 tsp ground cinnamon
  • 1 tsp salt
  1. Mix the wet ingredients together.
  2. Sift in dry ingredients and mix well
  3. With 1/4 c Scoop or measuring cup, Pour onto the hot pan with butter or oil.
  4. Cook for 3 to 4 minutes on each side on medium heat.
  5. Top with syrup. You can also add pecans if you would like.

Trish, I'm a big pumpkin fan and I've tried out all kinds of recipes but so far I haven't actually had one for breakfast. So this will definitely go into my fall recipe collection. I've published some unusual pumpkin recipes myself which you might want to look at.
