We are eating these with leftovers: stuffing and green beans.
- pork heart
- old bay seasoned salt
The butter was straight out of the freezer. I cut the top off and put the butter, a bit of sliced onion and 2 tablespoons of old bay seasoning in the cold buffet fryer.
Low and slow is the plan. Heat on. 250 degrees. Melt the butter, slide it across the pan. Then, add the heart slices. Make sure you can hear it sizzle as it hits the melted butter.
Add all the pieces and put the cover on. I want them to brown, then I will turn them. Then, same on other side.
Stuffing has some extra chicken broth added to it, about a cup. No cover, 350 degree oven. The beans were initially microwaved, but they can rewarm in the dish in the oven.
Now, we wait for the heart to cook.
I can now smell the different flavors in the fryer. Smells good.
Tender. Juicy. Flavorful. The heart softened with the low heat cooking. The stuffing got a nice crunchy top and the inside was moist. The beans were perfectly warmed.
