About Pineapple Coconut Sheet Cake

This is one of my favorite summer cakes. I usually make this cake for me to take to cookouts, Bbq's, and potlucks during the summer and it is always a hit. The recipe calls for fresh pineapple but you can replace with 1 crushed pineapple juice and all. You can even cut the pineapple in half or remove it all together and replace it with canned mandarin oranges cut up juice and all it is so good.

Ingredients

For the cake:

  • 1 cup Unsalted butter
  • 1 1/2 cup Sugar
  • 3 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Coconut extract
  • 3 cups Cake flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 1/2 cups Coconut milk
  • 1 cup Fresh pineapple, Chopped
  • 1/2 cup Sweetened flaked coconut

For the frosting:

  • 1 cup Sugar
  • 1 cup Heavy whipping cream
  • 2 cups Sweetened flaked coconut
  • 1/2 teaspoon Vanilla extract
  • 1/2 teaspoon Coconut extract
  • 3/4 cup Fresh pineapple, Chopped

Instructions

  1. Preheat oven to 350. Spray 13x9 baking dish with spray oil.
  2. In large bowl beat butter and sugar on medium speed with hand mixer until fluffy about 3 minutes. Stopping to scrape down sides.
  3. Add egg one at a time mixing well after each egg. Mix in extracts.
  4. In another bowl mix flour, baking soda, baking powder, and salt till well combined.
  5. Slowly add flour mix to egg mix a little at a time on low speed alternate with coconut milk. Starting and ending with flour. Mixing just till combined after each add.
  6. Fold in pineapple, and coconut.
  7. Spread mix in to bottom of baking dish
  8. Bake 30-35 minutes or until tooth pick comes out clean when inserted into the middle of cake. Let cool completely before frosting.
  9. For frosting, add cream, sugar, and extracts. Best on medium until thick like whipped cream.
  10. Fold in pineapple and coconut
  11. Frost cake and enjoy.
