Peach Crisp
The bowl of peaches was in the refrigerator. Hubby had peeled them, but they weren't as ripe as he would have liked, so they sat there in the refrigerator. Uneaten.
Then, he asked if I could cook them in sugar and then make an apple crisp style dessert so that he could stand to eat them. It wasn't too difficult. The peaches went into a pot with lid. I added some brown sugar, heavy whipping cream, a little water and a pat of butter.
This mixture was brought to a boil and boiled for a few minutes until I could easily poke a fork through one of the peaches.
Ingredients
- 4 cups peaches, peeled and sliced
- 1 cup brown sugar
- 3 tablesspoons heavy cream
- 1/4 cup water
- 1 tablespoon butter
For the Topping:
- 1 cup flour
- 1 cup brown sugar
- 1 tablespoon cinnamon
- 1 teaspoon ginger
- 1 stick butter
Cook until Tender
The peaches had been peeled previously, so I was able to just dump the bowl of them into the pan.
I wanted them to come to a boil, so the heavy whipping cream and the water was added for moisture. The peaches did exude a little moisture as they softened up. I brought them to a boil on medium heat, stirring occasionally, tilting the pan occasionally as well.
Topping for the Peaches
Once the peaches were simmered for a few minutes, I mixed up some flour, brown sugar, cinnamon, ginger and some melted butter.
It formed a crumbly dough.
I had a microwaveable glass dish that I put the cooked peaches into. I then dumped my flour mixture across the top of the peaches. I smoothed the top and placed the dish in the microwave. Initially, I set the timer for ten minutes on high.
It bubbled away and the top started to firm up. The brown sugar and the peaches made sort of a jam under the topping. I removed the dish and placed it in a spot where it could cool.
Once it was somewhat cool, I put aluminum foil over the top and placed it in the refrigerator. We will try it tomorrow.
