I love this Panko-Parmesan Crusted Oven Fried Chicken Recipe. As a southern, I was practically bottle-fed traditional deep fried chicken. These days I try to limit my intake of deep fried foods so I created a tasty healthier version with this oven fried chicken recipe.
Panko is the Japanese word for bread crumbs. I find them to be light and crispy and an excellent breading for an oven fried chicken recipe. Additionally, they can be used as a filler for crab cakes or as a crunchy topping for casseroles. Panko is more delicate and absorbs less oil than Western bread crumbs. They can be found in larger mega-marts or on the internet.
The parmesan cheese adds a level of flavor not attainable with traditional fried chicken. So try this healthier version of fried chicken. I don't believe you will be disappointed with this oven fried chicken recipe.
1 cup Panko or traditional bread crumbs
1/2 cup freshly grated Parmesan cheese
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp salt
2 eggs, beaten
4 skinless, boneless chicken breasts
Cooking oil spray
Pre-heat oven to 375 degree. Lightly coat a baking dish or sheet with cooking spray. Combine first 5 ingredients in a shallow bowl. Dip each chicken breast in the beaten eggs and then coat both sides with the bread crumb mixture. Arrange the chicken breasts on a baking sheet.
Bake for 35-40 minutes.

Just made it and it was really good I seasoned the chicken and the bread crumbs with the ingredients and added oregano and black pepper instead of cayenne pepper because I ran out. Also half of a lemon on the meat after i seasoned it made the chicken even better! I cubbed the chicken so it was ready in half the time. The Parm cheese in the panko is what gives it a really makes this dish.

I just made this and it had the right amount of seasonings!!! It was moist and surprisingly wasn't dry! I know my husband will love it! Oh, and I used flour before I breaded it. The panko breadcrumbs stayed on the chicken. The only problem I had was the bottom not being crispy, what did I do wrong?

This sounds amazing so I had to try. The taste was delicious and just the right amount of spicy but I had an issue with the Panko staying on the chicken as well. Next time I'll try the flour idea. Any other suggestions are welcome. Maybe I could try mixing a hint of almond milk in with the eggs or something, has anyone tried that?

I substituted Hungarian sweet paprika for cayenne, cut the chicken into strips, and tossed them in flour before the egg. Cut the cooking time about 10 minutes because of the smaller pieces. Turned out fantastic. Thanks for sharing.

Thanks for sharing, it was yummy and easy! I wasn't paying attention when I bought the Panko and ended up with seasoned Panko, and I did 1.5x everything for 6 breasts. It was awesome!

From my experience you need to dust them in flour first, then dip in egg and roll into the crumbs. This seems to work best for me. Good luck!
