Recipe for the Optional Veggie Cottage Cheese Salad

You need a quick, easy salad for a family meal, a pool party, or a get-together with friends. You want something you think everyone will like. Awwww... an Optional Veggie Cottage Cheese Salad! Delicious and good for you, too!

Why do I call it "optional"? Because, just like my Optional Cheeseball recipe, you can tailor it to what you like or what your family or guests will like. You can choose different vegetables. You can use a low fat cottage cheese, large curd or small curd. You can even switch it around with different mixtures.

If you grow your own garden, you can be sure to get your favorite vegetables. You would also be saving a lot of money on ingredients. A tip to keep ingredients for your salad all year long is to flash freeze you chopped vegetables and keep them in your freezer in a zip lock bag.

My idea for this recipe came from one of my aunt's salads. Rather than all the vegetables, she added boiled eggs, green olives, and mayonnaise. It was delicious, but I wanted to add more and take away a couple of ingredients. So you can choose to go by my optional recipe or get ideas from it to create your own. It will be yours.

Ingredients

  • 1 sweet onion, chopped
  • 1/2 red onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • green olives, sliced
  • black olives, sliced
  • 24 ounce container cottage cheese
Don't these vegetables look delish?  Use whatever veggies or additives you like.  For a different flavor, you could add jalapeno, mayonnaise, and/or boiled eggs.  It is all good!

Preparing the Vegetables

  1. Using my Cuisinart Ceramic Knives, I chop and slice all vegetables. Since it is an optional recipe, you can add or subtract whichever vegetables you like. For instance, I think a red onion is strong, and sometimes I leave it out. But, I like to make my salad look as colorful as possible, and the purple of the "red" onion adds flavor and color. Maybe it depends on the mood.
  2. Pour cottage cheese into a medium size bowl. If I am staying home, I put it in a glass or ceramic bowl. If I am taking it to a party, I like to place it in a plastic bowl with a lid.
  3. Mix veggies into cottage cheese. Place in refrigerator for 2 hours so all the flavors can blend. Personally, I like to make it the night before, but sometimes time does not permit. Some think it tastes like a cold pizza but without the grease.

Variations

There are so many variations you could do with this recipe. I have used both spicy banana peppers and jalapenos in mine. Be sure you slice/dice them when your hands and the peppers are dry to avoid the burn of their oil.

One thing we love to do during the summer growing season is take our tomatoes straight from the vine, chop them, then place them over our cottage cheese salad with a little salt and pepper. We love that with all the veggies or even with only tomatoes. I do not suggest you chop the tomatoes up and place them in the salad because they get mushy. It is better to use them on the side.

It is a great diet food with great taste. Who can turn that down?

HEY PAULA! Nope, no lobster, just veggies. Maybe it is the pimentos from the green olives or the red peppers. It is one of our favorite side and main dishes. We eat it all year round, but it is a favorite summer side dish. Garden vegetables are the best... I just haven't figured out how to grow olives in Missouri. ;-)

Susan......I missed this all these months, but I'm sure it's because I rarely read recipe hubs. However, I could swear I see bits of lobster in your salad and I can't resist lobster.

I don't see where you mention lobster, so obviously my eyes deceive me? Glad I read this anyway......just the ingredients makes me know I would love it and that it makes a perfect dish to bring to a gathering!

I love this because it is your own creation and not something I would have thought of combining. Most people think of adding fruit to Cottage Cheese. And it is SO pretty too. When I am looking for something to "hold me over" or "give me energy" - one thing I go for is Cottage Cheese. And this would be even more healthier with all the great veggies.
