One Pot Meal: Chicken Fricassee

Chicken Fricasee--we call this one Smothered Chicken, but whatever you call it, it's still delicious. It's a hearty chicken meal that has vegetables, too. All you need is a garden salad to make this meal complete.

I used a 3-4 pound fryer in this recipe. If you want to use one of the bigger hens that are available, you'll need to extend the cooking time a bit. I recommend using organically grown chickens whenever possible in order to avoid eating chickens that have been subjected to too much medication.
