So where exactly is Baysville Ontario?

How making oatmeal bars came about for me

My husband has been working this past little while close to Baysville Ontario, in the Muskokas. While there he's found The Humble Pie Bakery that he loves. The way in which he described the place makes it sound so warm and inviting. It's an older lady that bakes and runs the place. It has the old wooden floors and a couple of tables for anyone that wants to sit and stay a spell to enjoy one her delicious treats, pizza or coffee.

The other day I get a text from hubby saying he'd just eaten the most amazing bars and could I try to make them for him. He told me they were called South African Crunchies. Being the amazing wife that I am, I told him I'd see what I could do. After searching the web for a recipe I came upon two that sounded quite good.

Out to the store, I went to gather all the supplies I needed to make these oatmeal bars. Several recipes said that you have to use Lyle's Golden Syrup or else they won't taste quite as good with any other syrup. There was a time when every store carried it so I knew exactly what I was looking for, but ended up having to go to four stores to find it. By the time hubby got home the oatmeal bars were out of the oven and ready to sample.

I felt like Goldilocks from the Three Bears watching as he sampled the oatmeal bar. Well what do you think, I asked.

Hmm, not quite right. Can you try making them a little sweeter maybe, he replied.

Sure, I'll try. I'll make another batch of them tomorrow, I told him.

I had left the plate of oatmeal bars wrapped and on the counter and the next morning, there was only one left. Someone sure liked them.

Anyway I fiddled around with the recipe I'd used and here is what I came up with. Even though they're not exactly like The Humble Pie Bakery's South African Crunchies, they are quite tasty. If you've ever had Quaker Oats Oatmeal Bars and like them, you'll love these.

Lyle's Golden Syrup used to always come in a green can. If you cannot find it in the can it may be because it also now come's in a glass jar, which is approximately the same size as the can.


  • 2 1/4 cups of Large Flake Oats
  • 3/4 cup of Flour, All purpose
  • 1 1/4 cups of Coconut, Shredded
  • 1/4 tsp of Salt
  • 1/2 cup of Butter
  • 3 tbs of Lyle's Golden Syrup
  • 2 tbs of Milk
  • 1 tsp of Baking Soda
  • Cooking Spray
  • 1/4 cup of Sugar


  1. Preheat your oven to 350° F. Spray an 11" X 7" baking pan with cooking spray.
  2. In a medium size mixing bowl combine the flour, oats, salt, and coconut blending well.
  3. In a small bow mix milk with the baking soda and set aside.
  4. In a saucepan melt butter and sugar together with the Lyle's Golden Syrup. When it starts to bubble remove from heat and stir in the milk and baking soda mixture.
  5. Add this to the dry ingredients mixing well.
  6. Press the mixture into the baking dish and press down firmly.
  7. Bake in the oven for 15 - 20 minutes until golden brown. Turn off the oven and let the pan sit for ten minutes before removing from the oven.
  8. Cool completely before cutting into bars or squares.
  9. Serve and ENJOY!

This recipe looks to be easy to fix. I think I'll try it with artificial sugar, a low carb syrup and a milk replacement (Almond Milk?) to get the Carbs and Calories down?

I saw this on the feed, and revisited it. I was all set to make them, but I don't have coconut :( For now I will tweak the recipe to include the ingredients I do have, and next grocery day I will be sure to buy coconut flakes.

Kasman, I've used organic oatmeal before when making the oatmeal bars but that would be the only organic ingredient. I've never tried Clif bars but will look for them. Hope that you enjoy the recipe, and thanks for sharing and voting.

Well I'm going to definitely take advantage of your name and ask a question. Are the ingredients you listed mainly organic? I only ask because I loved what I read and I want to try this. See I eat CLIF bars currently and I know that most if not all the ingredients are organic and they hail from Canada. Maybe I missed it in the hub, but I didn't see it anywhere for sure. I will deffinately try this recipe. I, also, fiddle around with recipes. I will try this with a sugar-free syrup and a mixture of whole wheate and all purpose flower - to reduce sugar intake.

Ruby, If you have a hard time finding the syrup you could always substitute it with a golden or white corn syrup.

Genna, I used Quaker Oats and on the bag of oats it is is printed "LARGE Flake Oats". Not sure if the Quaker Oats come in a bag in the states or not but they do up here. Hope this helps. I'm sure any type of Quaker oats would work.

Lipnancy, Eating oatmeal this way is a great way to get some of that daily fibre we all need and it helps to lower cholesterol which is always a plus :)
