What You Will Need
- 4 lb whole chicken
- 1/2 cup white wine
- 1/2 cup soy sauce
- 1/3 cup olive oil
- 1 tbsp Garlic salt
- 6 garlic cloves peeled
- 1 tbsp paprika
- 1tbsp onion powder
- 1/2 tbsp oregano
- 3 sprigs of rosemary
- 1/2 portugese sausage sliced thick
Preheat your oven to 350 degrees making sure that your oven rack is placed in the middle slot of your oven and do your prep work as you wait for your oven to be just right.
Wash your chicken with salt and warm water, rubbing the salt throughout the chicken and rinsing.
In a small bowl add your salt, pepper, paprika, garlic salt, onion powder, oregano and combine well.
Add your olive oil to the bottom of the roasting pan and place your chicken in the pan and pour your wine over chicken
Add dry rub to inside, front and back of the chicken. Stuff it with 2 cloves of garlic, 4 pieces of chorizo and a sprig of rosemary. Place the remaining garlic cloves, chorizo and rosemary around your chicken, Now it is ready for the oven.
Cook your chicken breast up for 1 hour, basting once in between at about 30 minutes into cooking and then flip and cook for 30 minutes.
Flip the chicken back to its original position, increase to 450 and and let cook for another 10-15 for a crispy skin.
