Being adventurous has brought me out from my motherland, and I ended up in a country known for its melting pot of culture, which has so much good food. Growing up in Nigeria, I had been exposed to a myriad of herbs as a result of having generous amounts of it in our various delicacies. Upon marrying my wife who is of Chinese ethnicity, we both embarked on a journey of gastronomical adventure, delighting each other with our vastly different styles of cooking and totally different dietary preference.

One very impressionable moment was when my wife introduced this herb - ginseng, which she cheekily called the man-root. Well, I later found out that ginseng was a root with a peculiar appearance that highly resembles a person. Its’ root were forked-shaped and looks like the legs of a man, hence, the name. I was initially hesitant to try it out, but, gave in after much persuasion from my wife. The winning argument was that ginseng has medicinal value and integrating it into our diet can help to greatly improve our health, when consumed in the right amount.

Health Benefits of Ginseng

I did some research on the herb and found out that ginseng actually have quite a number of science-backed health benefits. An article in Healthline stated that ginseng is actually a potent antioxidant that can help reduce inflammation and improve the capacity of body cells. In addition, taking ginseng in small amounts can also help improve brain function. Amongst the positive effects recognized in subjects that were examined, was that their brain functions ranging from behavior, memory, and mood vastly improved. On top of that, ingestion of ginseng actually boosts the subject’s mental performance and reduced their fatigue as well.

How to Consume Ginseng?

With all these newfound information, I decided to give this ginseng root a try. The most common way to get the best benefit of ginseng is to consume it on its own, such as slicing it thinly and chewing on it. Another way would be to add it into a cup of hot water and let it steep for awhile before drinking it. Some people even consume the whole root by grounding it into powder form and adding it into cooked food, preferably steamed dishes. Well, my wife and mother-in-law have their own personal favorite recipe using ginseng and they have agreed for me to share it here. Do let me know if you like it in the comments below!

Ingredients

  • 2 chicken thighs, de-skinned
  • 3 pcs American ginseng, sliced thinly
  • 1/2 tablespoon Chinese wolfberries/ goji berries
  • 3 pcs red dates
  • 1 bottle chicken essence
  • 200 ml water

Optional Ingredient:

  • Chicken feet, de-clawed

Cooking Instructions

  1. First and foremost, remove the skin from the chicken thigh and clean it thoroughly with salt and rinse.
  2. Next, place the chicken thighs into a slow cooker. If you do not have a slow cooker, you may use a ceramic pot instead, cooked over a stove.
  3. Put all your other ingredients into the pot - sliced ginsengs, red dates, and wolfberries into the pot with the chicken.
  4. Subsequently, pour the water into the pot, close the lid, and switch the power on to high.
  5. After 2 hours, add in the chicken essence. Lower down the heat to medium and allow it to continue cooking.
  6. Once the four hours is up, you may switch off the power and ladle the soup into a bowl and serve.

Slow cook the soup for 4 hours in a slow cooker. If you are cooking using a ceramic pot on normal stove, you can let it cook a little longer to absorb the chicken essence better
