Lock Down Master Chefs in the Making

Being cooped up at home during the restricted movement order has certainly seen a new trend of self-acclaimed ‘master chefs’ amongst those that indulge in cooking as a way to pass time. My spouse and I have also fallen into that ‘trap’ and we have been challenging each other to friendly cook-offs session in our little kitchen, where we spent quite a considerable amount of time experimenting with recipes.

Although my other half and I are competitive in spirit, we usually perform our research for new recipes together. We love the thrill of discovering original recipes and innovative methods of cooking and putting it to the test ourselves. These cooking sessions are a kind of fun experiments we always look forward to as we get to enjoy the food after all the hard work.

In the spirit of healthy competition, my significant other has decided to outdo my Nigerian Fish Pepper Soup recipe with her take on a Chinese-style steamed golden pomfret. Albeit it being a totally different type of fish and dish altogether, she insists that her mom’s recipe is much tastier and simpler than my own. In true nature of a gentleman and a not so submissive husband, here I present to you the recipe and step-by steps for you to try it out on your own.

Ingredients

Key Ingredient:

  • 600 - 800gm Golden pomfret, whole

Other Ingredients:

  • 1 1/2 teaspoons sesame oil
  • 1/4 teaspoon white pepper
  • 1 teaspoon oyster sauce
  • 1/2 teaspoon light soy sauce
  • A pinch salt
  • 10 ml Shaoxing wine/ Chinese cooking wine
  • 1 marinated sour plum, whole
  • 1/2 medium-sized tomato, sliced
  • 5 slices ginger, julieenned
  • 2 red chilies, slitted
  • 3 cloves garlic, sliced

Garnishing:

  • 1 green chili, sliced

Cooking Instructions

  1. When you purchase the pomfret, get your fishmonger to clean the scales and remove the gut. Before you begin cooking, wash the fish and rinse the cavity to remove any blood or remnants of the gut.
  2. Place the clean fish on a plate to begin the quick marinade. Start by putting the salt, soy sauce, white pepper, sesame oil, oyster sauce, and Shaoxing wine on the fish.
  3. Retrieve your sour plum and lightly mash it with your fingers. Rub the plum on the fish and concurrently spread the marinade along the entire length of the fish. You may remove the stone from the sour plum or stuff it into the cavity of the fish to allow the flavor to seep into the fish meat.
  4. Next transfer the fish and the marinade juice onto a clean plate suitable for steaming.
  5. Fill a steamer up to ¼ full with water and put it to high heat to boil.
  6. Decorate the fish with the sliced tomato, ginger, and garlic.
  7. Once the water in the steamer is bubbling, place the plate of fish into the steamer and let it cook for about eight minutes with the lid on. Prop the plate up with a steamer stand to avoid the plate from dancing round while it steams.
  8. Once the eight minutes are up, switch off the heat and remove the fish.
  9. Garnish the fish with sliced green chilies and serve.
