My Love for Fettuccine Alfredo
My love for Fettuccine Alfredo run's deep inside me mainly because I am a lover of anything that is a sauce, like cheese sauce, tomato sauce and bechamel sauce just to name a few and paring them two together the makes it having the best of both worlds.
It's that creamy cheese sauce that can be paired with good pasta but also with different types of meat and seafood even vegetables like Shrimp. Chicken and Broccoli, talking about just makes my mouth water.......YUM.
What I want to share with you today is my version of Fettuccine Alfredo with a few other ways to take it if you want too.
Talking about Alfredo Sauce
To me one of secrets of making a good creamy Alfredo Sauce how you incorporate the ingredients as your making it, for me it has to be in a certain rotation so it can be really smooth and creamy yes, I mean the way you add your flour, heavy cream and the milk along with that egg yolk but the key to this is when you're putting it together you want that milk really cold keep in mind this is not store brought Alfredo Sauce when making you're going to add the flour the after that I add the really cold milk then pour the heavy cream directly into the cold milk at this point you're on your way to making some good creamy flavored sauce.

When cooking my pasta fettuccine or any kind of pasta I follow the directions on the box but what I do when I am cooking it to add to a sauce is 2 minutes before its done, I pull it because it going in to the sauce then it will continue cooking and you do not want it to be soggy and really soft I like my pasta to have a little bite. You should always taste your pasta when you're cooking it
Taking it up a Notch
If you are making a really good Fettuccine Alfredo you don't need to do anything to make it better but you can always take it up a notch by add a protein or a vegetable like shrimp , chicken or broccoli adding any of these will really turn it into a complete meal that you and family and friends will love and you can also. with all this said let's make some Fettuccine Alfredo.
1 pound of fettuccine
3 tablespoons of butter, divided
1 teaspoon of sea salt
1 teaspoon of black pepper
2 cloves of fresh chopped garlic
2 tablespoons of all-purpose flour
1 cup of cold whole milk1/2 cup of heavy cream
1 medium egg yolk
1 1/2 cups of grated parmesan cheese, plus more for garnish
1 teaspoon chopped parsley, for garnish
To begin cooking the fettuccine, follow the instructions on box, saving a cup of pasta water to thicken the sauce if you have too. Now set you stove for medium heat then add large skillet on the burner then heat up 2 tablespoons of butter until it melts then add your chopped garlic let it cook until you can smell the garlic in the air at this point stir in your flour and mix it up a little bit so it doesn't burn about a few minutes, while your stirring pour in your cold milk continue to mix by stirring and pour the heavy cream right into the cold milk continue to stir drop your stove down to low heat and add you egg yolk keep stirring to incorporate it all together. Let the sauce continue to simmer now add in your parmesan cheese so it can melt into the sauce so it can thicken up now you can add your pasta make sure it good and coated now if you want you can garnish with more parmesan and add some parsley.

Now if the sauce is to thick you can add some of the pasta water you save to thin it out and you can also add some shrimp, chicken, or broccoli to take it up a notch. Serve and enjoy.
