Cold Pasta Salad with Chicken

This is one of my favorite pasta salad recipe's for a warm summer day. I like to make more than I need and store the leftovers in the refrigerator for ready made meals. It's easy to make but a little putsy with all the chopping and cutting, which is another reason I make a double batch.

Cold Chicken Pasta Salad

Ingredients for Pasta Chicken Salad

  • 2 Cups or 8 Ounces Cooked Chicken, Torn or Diced into Pieces
  • 8 Ounces Pasta of Choice (I used Spiraled Pasta)
  • 1 Large Cucumber, Seeded and Cut into Chunks
  • 1/2 Cup Celery, Diced
  • 1/2 Cup White Onion, Diced
  • 1/3 Cup Black Olives, Sliced
  • 3/4 Cup Mayonnaise
  • 1/3 Cup Italian Dressing
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper, To Taste
  • (Optional) 1 Cup Grapes, Diced ( Great Sweet/Salty Combination)

Definition of Pasta Salad

Wikipedia definition of pasta salad: a dish prepared with one or more types of pasta, usually chilled, and most often tossed in a vinegar, oil or mayonnaise-based dressing. It is typically served as an appetizer or a main course. Pasta salad is often regarded as a spring or summertime meal, but can be served year-round.

Instructions for Cold Pasta with Chicken

  1. In a small bowl, combine mayonnaise, Italian dressing, Lemon Juice, salt and pepper.
  2. After tearing and dicing, combine chicken, black olives, celery, cucumber and onion in a large bowl.
  3. Pour sauce mixture in large bowl and toss.
  4. Chill before serving.
  5. Optional: Serve pasta with French bread, baguette or biscuits.

  • Greek Pasta Salad

You can see there is no shortage of delicious cold pasta salad's to enjoy all year long. You can add vegetables of your choice as well as proteins like chicken or seafood.
