Mukimo (Fresh Maize, Potatoes & Pumpkin Leaves) and Beef Stew Recipe

Mukimo is a very popular dish among the Meru, Embu and Kikuyu communities of Kenya. It is eaten as a main meal. It can be accompanied by meat, vegetable, soup or a beverage such as milk, tea or coffee.
Beef stew is a very popular stew in Kenya. It is prepared in various ways with the standard ingredients featured in this recipe. It is usually accompanied by Ugali, rice, potatoes, chapatti or mashed dishes.

Ingredients
For the Mukimo:
- 6 (876g) Irish potatoes, unpeeled
- 4 bunches (31 g) pumpkin leaves
- 2 ½ cups (479 g) fresh maize(white), boiled
- 2 cups (453 g) water
- 2 ½ tsp. (12 g) salt, iodized
For the Beef Stew:
- 1 kilogram beef, medium fat, without bone, raw
- 2(164 g) onions, red skinned, raw, unpeeled
- 3(304g) tomatoes, red, ripe
- ½ tsp. (3 g) salt, iodized
- 1½ tbsp. (20 g) cooking oil
- 3 1/8 cups (682 g) water
Instructions for the Mukimo
- Peel, wash and then chop the potatoes.
- Wash the pumpkin leaves and chop finely.
- Add 2 cups of water into a cooking pot. Add the potatoes, pumpkin leaves and salt.
- Cover the cooking pot and boil the mixture for around 20 minutes.
- Add the boiled maize to the cooking pot and cover to cook for 10 minutes.
- Remove the cooking pot and leave it to cool down for a while.
Instructions for the Beef Stew
- Peel, wash, and then chop the onions.
- Wash the tomatoes and then chop them.
- Place the onions and tomatoes in separate bowls.
- Chop beef into small cubes and wash them.
- Pour the water into a cooking pot, pour in the beef cubes, and boil until tender.
- Turn off the heat and strain the remaining water
- Put the meat in a separate bowl.
- Heat the cooking oil in a cooking pot for around a minute.
- Add onions and cook until tender.
- Add tomatoes and salt and cook until tender
- Add the boiled meat and stir.
- Add the liquid drained from boiling the meat
- Stir and then cover the cooking pot
- Cook for around 8 minutes.
- Remove the cooking pot from heat.
- Serve the beef stew with the Mukimo.
