Mughlai Chicken Curry
A Great time - tested Chicken Recipe straight from the Mughlai Kitchen
MUGHLAI CHICKEN CURRY
- Chicken pieces 750 gms
- Red Chilli powder 2 heaped tspns
- Turmeric powder ½ tspn
- Coriander powder 1 tspn
Spices To be ground:
- Ginger 1 small piece
- Garlic 12 cloves
- Cloves 2
- Black Pepper 6
- Cinnamon 1 small piece
- Black Cardamom 1
- Cumin 1 tsp
To be ground:
- Onions 3 medium size
- Tomatoes 3 medium size
- Curd 2 tbspns
- Oil for cooking
- Boiled egg 1
- Cut chicken pieces, wash, apply salt, ingredients and ground spices and keep aside to marinate.
- In a pan, heat oil and fry the onion - tomato paste. Fry over low heat till oil separates.
- To the marinated Chicken add beaten curd and mix well. Add Chicken to the fried Onion - Tomatoes.
- Fry for a while until the Chicken is well mixed with masala.
- Add hot water and let it cook till chicken is tender.
- Cook for a few more minutes and garnish with Green chillis, Coriander leaves and boiled egg,.
- Serve hot with Roti or Gakhar which is a special Mughlai Bread.

In Butter Chicken naturally the medium of cooking is butter. Here we use oil... either refined sunflower or groundnut oil. ThanX Trsmd for visiting.

Thank you Abhishek for your analysis. You may be right about the tomatoes but I make my Mughlai Chicken Curry this way and it tastes great. Do try it out.

This is NOT Mughlai Chicken. Though it would make a great tasting curry but it's NOT Mughlai. Tomatoes were not used by the Mughals and were introduced into India by the Portuguese, and it was only very recently that they were incorporated into Indian cuisine.
Tomatoes have to replaced by more yoghurt in the recipe.
Two key Mughlai ingredients which are missing here are roasted almond paste and cream (malai).
Anyway, GREAT RECIPE, WRONG NAME!
