Mrs. Wages Pickle Making - Water Bath Canning

Fill canner with water. Jars must be covered with water, by 1/2 inch. Full jars displace water. One jar displaces 4 cups.

  • mustard seed

A canner kettle basket holds 7 jars. This is why the Mrs. Wages mix measures for a quantity of 7 jars.

Sometimes, a person doesn't have a full batch (7 jars) and that's when you have to add more water to your canner to make up for missing jars.

The water still needs to cover the jars.

The jars are cool. The pickles are cool. The brine, lids, and rings are hot.

The water bath heats to steam and the steam escapes out the top. Then, after 12 minutes, the jars are removed and placed in a spot to cool.

The lids will tighten downwards. Sometimes you will hear a pinging sound as they seal
