Mixed Vegetable Pulao
Mixed Vegetable Pulao ( Pilaf )
Serves 6
Ingredients : :
Long grained Basmati Rice … ½ KG, washed and soaked for 15 mins
Green Gram Lentil … 100 Gms, semi-cooked
Tur Dal … 100 Gms, washed and soaked for 15 mins
Onions … 3, medium sized, sliced
Potatoes … 3, peeled, cut into medium sized pieces
Green Peas … 100 Gms
Green Brinjals … 3, cut
Carrots … 3, peeled, cut
Green Bell Peppers … 3, cut
Spices … Few whole Black Peppers, Cardamoms, Cinnamon sticks, Bay leaves, Cumin
Vegetable cooking Oil … Vegetable cooking Oil … 4 tbns
Clarified Butter … 2 tbsns
Garlic paste … 1 tbspn
Turmeric … ground, 1 tspn
Red Chilli powder … 3 tspns
Coriander powder … 1 tspn
Juice of 1 lime
Salt to taste
Kewra essence … 1 tspn
Green Coriander leaves and Mint leaves for garnishing

Vegetables
Method : :
In a pressure cooker heat oil and clarified butter. On low flame add all spices and stir constantly. Add garlic paste and fry for one minute. Add sliced onions and fry for 2 to 3 minutes.
Vegetables ... ready for cooking
Add cut vegetables, turmeric, chilli powder, coriander powder and cook on high heat with constant stirring for 5 minutes. Add Rice and Lentils and mix nicely. Add water so as to level up half inch above the rice. Add Kewra essence and lime juice. Add salt to taste. You will require approximately about 5 to 6 tspns of salt. Taste the water to confirm its saltiness.
Cooking
Put on high heat till it starts boiling. Add peas and bell peppers. Mix well and close the pressure cooker lid. Cook till 3 whistles on high heat. Lower the flame and cook for 5 minutes more. Take it off flame and let it cool. Open lid and serve hot after garnishing with green coriander leaves and mint leaves.
