Mixed vegetable pulao ( pilaf )


Serves 8

Ingredients : :

Long grained basmati rice … ½ Kg, washed and soaked for 30 mins

Green gram lentil … 100 grams, semi-cooked

Tur dal … 100 grams, washed and soaked for 15 mins

Onions … 3, medium sized, sliced

Potatoes … 3, peeled, cut into medium sized pieces

Green Peas … 100 grams

Eggplants … 3, cut

Carrots … 3, peeled, cut

Green bell peppers … 3, cut

Dried red chili ... 1

Spices … Few whole black peppers, cardamoms, cinnamon sticks, bay leaves and bay flowers, cumin seeds, mace

Vegetable cooking Oil … 4 tablespoons

Clarified butter … 2 tablespoons

Garlic paste … 1 teaspoon

Ginger paste ... 1 teaspoon

Turmeric powder … , 1 teaspoon

Red chili powder … 1 teaspoon

Coriander powder … 1 teaspoon

Juice of 1 lime

Salt to taste

Kewra essence … 4 drops

Green coriander leaves and mint leaves for garnishing

Method : :


In a pressure cooker heat oil and clarified butter. On medium flame add all spices and stir constantly. Add garlic and ginger pastes and fry for one minute. Add sliced onions and fry with constant stirring till the onions just begin to turn golden brown.

Add cut vegetables, turmeric, chilli powder, coriander powder and cook on medium heat with constant stirring for 5 minutes. Add Rice and Lentils and mix nicely. Add hot water so as to level up half inch above the rice. Add kewra essence and lime juice. Add salt to taste. You will require approximately about 3 teaspoons of salt. Taste the water to confirm its saltiness.

Put on high heat till it starts boiling. Add peas and bell peppers. Mix well and close the pressure cooker lid. Cook till 3 whistles on medium heat. Lower the flame to low heat and cook for 5 minutes more. Take it off flame and let the pressure cooker's pressure fall. Open lid and serve hot after garnishing with green coriander leaves and mint leaves. Tastes great with green salad.
