Mediterranean couscous salad is a wholesome appetizer with loads of flavors, tons of texture, and all the nutrition you can think of. This salad has the most incredible and refreshing flavors and it is very easy to make and a very colorful salad. It is heart-healthy and going to make you full of goodness.

Last year, I and my friend saved our money for the trip to Sicily Island because we love traveling and food. Sicily is the Mediterranean's largest, beautiful land of rugged countryside. We were so tired of all the walking so we decided to have lunch in the restaurant. I ordered Mediterranean quinoa salad but my friend orders this Mediterranean couscous salad. She just offered me to taste hers and we switched our salads because I found this salad more delicious. I have made it several times and every time it makes me go to the epicure.

I used whole wheat Israeli couscous but you can use any pasta shape with it like orzo, small shells, farfalle, etc. Couscous is a very good source of plant-based proteins, minerals, fibers. It boosts up your immunity and keeps you fuller for longer. On top of that, it is low-calorie food so it is very great for weight loss. It has a nutty taste or a little savory taste.

I used zucchini, and squash in it. You can also use cucumbers on behalf of these things. Cucumbers are a great source of zucchini and squash. Zucchini is rich in antioxidants, vitamins, minerals, and many important nutrients. It contributes to healthy digestion. It may aid your weight loss diet and it is very to add to your diet. On the other hand, squash is very beneficial for kids and ladies. It increases strength and fitness. It maintains a healthy eight. It also increases the flexibility and strength in the back so it is very good for athletes.

You can have this salad as an appetizer for lunch or dinner. You can make it a part of your daily diet as well. You can also serve this to your guests in gatherings, party dinners.

Ingredients

  • Whole wheat couscous-1 and 1/3 cup
  • Pine nuts-1/3 cup
  • Chickpeas-1 can (cooked)
  • Grape or cherry tomatoes-1 pint (quartered)
  • Feta crumbled cheese-4 ounces
  • Kalamata olives- 1/3 cup (thinly sliced)
  • Zucchini-1 medium (thinly sliced into rounds)
  • Yellow squash-1 small (thinly sliced into rounds)
  • Fresh basil leaves-1/3 cup (chopped)

Dressing

  • Extra virgin olive oil-1/3 cup
  • Shallot-1 large (finely chopped)
  • Lemon juice-2 to 4 tbsp
  • Garlic cloves-2 (minced)
  • Sea salt-1/2 teaspoon
  • Black pepper

Instructions

  1. Cook the whole wheat couscous according to the instructions given on the packet. Drain the excess water out of the pot and set aside the cooked couscous to cool.
  2. Toast the pine nuts in a pan over medium heat, stirring frequently until the pine nuts turn golden brown and a little fragrant. Once they are toasted, set them aside to cool.
  3. In a meanwhile make the dressing. Mix extra virgin olive oil, shallot, lemon juice, minced garlic, salt, and several twists of black pepper and whisk it until all the ingredients are completely blended.
  4. Put the cooked couscous, chickpeas, quartered cherry tomatoes, toasted pine nuts, feta crumbled cheese, Kalamata olives, sliced zucchini, and yellow squash, and chopped basil leaves in a bowl and pour the dressing over it and toss all of the ingredients for some minutes.
  5. Sprinkle a pinch of salt and black pepper over the salad to season your salad. Taste and add 1 tbsp of lemon juice more if it required more tanginess it and serve!

Notes

  • For the best flavor, let the salad marinate in the refrigerator for 30 minutes before serving.
  • You can add cucumbers in place of squash and zucchini.
  • If you want to keep the salad or leftovers, keep the dressing and salad mixture separated and covered in the refrigerator.
