Mashed Red Potatoes With Chives Recipe


This is a simple recipe for mashed red potatoes with chives. The recipe is intended to be used as a guideline, as I encourage everyone to experiment in the kitchen and achieve their own original recipes based on their desired tastes.

A few notes about this recipe. I added mayonnaise to increase the creaminess of the mashed potatoes. This ingredient can be left out if you wish. Also, I like to leave the skins on the potatoes when I make this dish. I feel it enhances the flavor as well as the nutritive value, as potato skins are known to contain many nutrients including potassium, fiber, and vitamin C.

These mashed potatoes are delicious, especially when served as a side with steak, ribs, or chicken.

  • 2 lbs red potatoes
  • 2 tsp sour cream
  • 2 tbsp milk
  • 2 tbsp butter
  • 1 tbsp mayonaisse
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chives, chopped


  1. Scrub the red potatoes and roughly chop them into quarters (depending on the size of your potatoes), leaving the skins on.
  2. Place the potatoes in a large pot and fill with water. Bring to a boil before reducing the heat to a simmer. Simmer the potatoes until soft, which usually takes about 20-25 minutes.
  3. Drain the potatoes in a colander. Once the water has drained, return the potatoes to the pot.
  4. Add the milk, butter, mayonnaise, sour cream, garlic, salt, and pepper to the potatoes. Using a potato masher, mash the potatoes to your desired consistency.
  5. Fold in the fresh chives and enjoy.
