Before I share the recipe, there are four small tips that I do to make my pancakes the best there is for eating at any time of the day. But, of course most people think of them as breakfast food but we eat them around here for dinner too.
- Have A Good Quality Skillet – To be able to create the best pancakes that we’ve eaten I use a cast iron skillet. A cast iron skillet is best because it distributes the heat evenly over its large cooking surface. If you do decide to skip this step, then you might burn or undercook more pancakes than you would otherwise.
- Put Sugar In Your Batter – It is important to put sugar in your batter because it allows the pancake to crisp up. The sugar directly touching the skillet will caramelize and form a perfect crust, not to mention it makes the pancake taste nice and sweet.
- Put Egg Whites In Your Batter – Putting egg whites in your batter will allow your pancakes to be fluffy and light. After you separate your eggs, take the whites and whip them into stiff peaks. Your egg whites should be incorporated into the rest of your batter only after the yolks and the milk are mixed together.
- Make A Topping – Making a topping is a great alternative to syrup or whatever your topping of choice is. What I do is make a berry topping, by buying a frozen package of berries. I prefer a berry without large seeds so when the berries cook down the sauce is not filled with seeds. Cook your frozen berries with some sugar to sweeten it up, and with some starch to thicken the sauce. I prefer not to mush up the berries, rather let them explode by themselves.
Hint: If you don’t want to waste your egg yolks, crack all of your eggs into a bowl and incorporate your sugar at this time. Fill a pot of water and heat it over the stove. When it comes to a boil, place the bowl over the pot, creating a double boiler effect.
Stir the eggs constantly, and when they are warm to the touch take them off the heat. Place them into your mixer and whip your eggs until they form stiff peaks. You can now incorporate your fluffy eggs into the rest of your batter.
Mixing it Up
Making pancakes is easier then most think and I’m able to mix it up quite a bit, adding different fruits, jams, or even peanut butter as a topping, but I should warn you my husband is a little crazy when it comes to dressing up his breakfast. It seems he has no patience and doesn’t even wait for the butter to melt before he adds things on to the top. Sometimes I look at his and wonder just how he could even eat that!
You can pretty much add anything you want to my recipe and it’ll taste good, and even though I prefer not to add my fruits into the batter you can and it will be amazing, I have made them with apples, bananas, blueberries and even raspberries in the batter but for some reason I’d rather see the berries or whatever fruit I’m using on top.
Simple and Easy to Make For Your Families Next Breakast
I was going to add just a simple plain recipe, then decided to change it up and give an easy recipe that uses one apple. You can still make this plain by omitting the apple, nutmeg, cinnamon, lemon rind and the powdered sugar (unless you prefer that for the topping).
Also if you want buttermilk pancakes then substitute the 1 1/2 cups of milk for 1 1/2 cups of buttermilk. Same goes for the apple instead try using bananas or blueberries actually, any fruit will work so mix it up and give it a try.
Just remember to leave out the nutmeg, cinnamon and the lemon rind those just seem to go better with the apple.
- 2 cups flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 2 eggs, lightly beaten
- 1 1/2 cups milk
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 teaspoon salt
- 1 medium cooking apple
- 2 tablespoons butter, (melted)
- 4 tablespoons vegetable oil
- 1 lemon, rind (grated)
- 1/3 cup powered sugar, sprinkle after cooked
- Mix flour with salt, sugar and baking powder
- In mixing bowl combine eggs, butter, milk, nutmeg, cinnamon and the lemon rind (grated)
- Add the liquid ingredients to the dry ingredients, stir until slightly smooth but slightly lumpy
- With a knife carefully peel and core the apple then cut into thin slices folding into the batter mixture
- Take the vegetable oil and put into a large frying pan and heat it till hot
- With either a ladle or large spoon pour in the batter mixture
- Pan fry on low to medium heat
- Flip over when the edges look cooked and the top has many tiny bubbles
- Now you can take a little powdered sugar and sprinkle over cooked flapjacks

I myself prefer bananas and whipped cream on top of my hotcakes but only after all the butter melts.
There are so many toppings that are favourites here in our home, these are just a few that you might like to try.
- peanut butter, maple syrup, any flavour of Jam, or any type of berries with whipped cream on the top.
Only my husband would think of using oranges as a topping for his flapjacks, but each to their own it’s all matter of taste.
Never to Early to Get Ready for Pancake Tuesday
In order for my kitchen to run smoothly I need to have the things that make cooking not just breakfast but any meal that much easier. Below are a few of my favourites and even though the griddle is mostly for larger families we do have one just in case we have guests staying here, after all, they too have to eat at some point.
- The first is the cast iron skillet, other skillets are less expensive but I prefer to cook with these pans. All cast iron cookware comes pre-seasoned ready to use and you can even get them in a grill/griddle combo.
- If you’re anything like me having your sugar sit in the bag on the counter looks out of place. I use a nice looking sugar bowl and I know some people use a sugar canister. Either way, you got to admit it looks better on the counter than the sugar bag does.
- Since I only cook with cast iron I can get away with using a stainless steel spatula or turner as some may call it for all of the flipping I do when making these for my family.
- I find the best way to get the egg whites is to use an egg separator that’s the easy way. There are many egg separators to choose from and they don’t need to be expensive after all your just separating an egg.
- Now if you have a larger family and don’t want to stand over the stove too long than the electric non-stick griddle might be the way to go. That way unlike me you could cook a larger batch at a time, as it is I cook maybe 2 to 3 flapjacks at the same time but then there’s only two of us to feed.
