The Best Thing to do with Old Bananas?

The best thing to do with over-ripe bananas is to make banana bread. I mean, when else do you make banana bread? When the bananas are spoiled, right? At least that is the truth for me. I don't purposely plan to make banana bread, but when I have a few rotten (well, almost) bananas, I'll think, "Oh, it's time to make banana bread." It's a rare treat, at least in my kitchen, that family and friends always enjoy.

So, do you have to make the banana bread as soon as the bananas go bad? No way! I put the rotten banana (rarely more than one at a time in my house) in a freezer bag and stick it in the freezer. When another banana goes bad, I pop that one in there. While two bananas are enough with which to create a delightful banana bread, it is not necessary to make the bread even then. I've frozen the bananas for months, and they work fine when you are ready to make your bread. Get the kids involved! It will be a good lesson for children to know that they can save and use old bananas. What a great recycling lesson!

This banana bread recipe uses half white and half wheat flour, and applesauce instead of oil.

Ingredients for Banana Bread

1/4 cup butter, softened to room temperature

1/3 cup sugar

1/3 cup brown sugar

2 eggs

3/4 cup flour

3/4 cup wheat flour

1 tsp. baking soda

1 tsp. salt

2 over-ripe bananas (the really dark ones out of the freezer work well)

1/2 cup apple sauce

1/2 cup sour cream or 3 Tbs. milk

1 tsp. vanilla

Optional:

1 cup chopped walnuts

1/2 to 1 whole 12 oz. bag semi-sweet chocolate chips (optional, but I often use since I'm a chocoholic)

Instructions for Making Banana Bread

Preheat oven to 350 degrees. Mix together butter, sugar, and eggs. Sift dry ingredients together, and then combine with first mixture. Mixing and stirring are jobs that kids can do to help, as is blending with a hand-held mixer. Stir current mixture by hand, as it will be too thick for beaters.

Next, peel those bananas, adding them along with the applesauce, sour cream, and vanilla. Mix all this up well, for a few minutes, with the mixer. Add in nuts and/or chocolate chips, as desired. Pour into buttered or sprayed 9x5x3 inch loaf pan. Bake for 40 minutes and check it, as ovens do vary. To check for doneness, take out the bread and and insert a toothpick. I thought this was a neat baking trick when I learned it as a child. If the toothpick comes out clean--without gooey batter--then the bread is done. Empty onto rack to cool.

Okay, so now you have your banana bread. That's the usual thing to make when you have over-ripe bananas. But here's an added bonus if you want a sweet treat--a banana (preferably with chocolate) milkshake. This is a quick and tasty treat for the whole family! And a great reward for everyone involved in the baking of the bread!

Don't have time for breakfast? This banana chocolate milkshake is also a simple, nutritious treat to make and drink when you're in a hurry. If you're like many folks, you're usually in a hurry in the mornings. With this quick recipe, you can drink your breakfast, either while you're getting ready for work or, like me, on the drive to work. Believe me, it goes down good and easy!

All you need are three ingredients:

1 or 2 over-ripe bananas ( I used a black and less black banana to make a large shake!)

1 glass of your favorite milk (or less to leave room for blended bananas)

Several squirts of chocolate syrup (I use sugar-free!)

Mix all three ingredients up in a blender until smooth. Add a straw and you have a delicious, refreshing, and pretty healthy milkshake.

I used to be hesitant about buying too many bananas at a time because they would get too ripe before they were all eaten. That isn't an issue now, as I have some great ways to use them when I'm ready. Buy those bananas, let them rot, and make a shake! Yummy!

healthwealthmusic--Yep, you can freeze the whole banana and just squeeze out the insides later when you need them. Of course, peeling and smashing first works, too. Oh, believe me, I like banana bread

Hmmm, freezing the bananas right in the peel is a new idea to me! We also peeled and and smashed the bananas before freezing them. And I have never tasted banana bread with choc. chips. Maybe I'd like it better then!

When we were kids we would make banana bread with our mom. I won't say when, because that will give away my age, lol. I haven't tried it with the apple sauce. I love reading recipes (and writing them)I would love for somebody to create a recipe using Andes mint candies. If I were to do it I would probably use Hershey's dark cocoa as a base.

Because they're so sweet, they allow you to cut down on the sugar in the recipe, too!

I used to purposely keep banana's in the freezer for just making banana bread. Brings out the sweetness. Maybe next Christmas season I will release my recipe for fruit cake (not using the normal glaced fruits) which uses Banana's and pear butter for the base, and dried fruits soaked in Rum and nuts for the filling. Almost sold the recipe to Harry & David, but glad I didn't in retrospect.
