This lemon meringue pie recipe originally comes from France. Luckily I got it from a friend’s mother. She lives in Paris and she’s been making this pie for the past 20 years.

She relieved me some secrets of making the perfect lemon pie and I had to ask her to give me her recipe. The beauty of this dessert is that it is a perfect combination of sweet simple meringue and heavenly rich lemon filling.

When you try it for the first time, you will enjoy its taste in a special way. It will be the best dessert ever.

So, this lemon meringue pie recipe is actually very old, but this is its beauty and luxury of taste.

The secrets of lemon meringue pie recipe

Making a perfect lemon meringue pie is actually not as hard as it may look. But, there are some things to pay attention to.

This lemon meringue pie recipe has three parts and every past has to be just right in order to make a perfect lemon meringue pie.

  1. The dough shouldn’t be too soft, not too hard. It should be thin enough to let the taste of the lemon filling be the dominant one.
  2. The lemon filling has to be thick enough and the tastiest part of the cake.
  3. The meringue has to be thick and sweet enough to neutralize the sourness of the lemon filling.

Recipe for lemon meringue pie



  • 250g/9 oz flour
  • 125g/4.5 oz butter
  • 3 tablespoons sugar
  • 1 egg
  • 1/2dl/2 fl oz cold water
  • Pinch of salt

  1. Mix sugar, salt and flour.
  2. Add cold butter, cut into little peaces.
  3. Knead quickly with eggs and water.
  4. It doesn’t matter if there are little crumbs into dough.
  5. Cover the dough with plastic foil and put it in a fridge for 30 minutes.
  6. Roll out the dough and put it in the pie mold.
  7. Prick the dough with a fork to stay flat.
  8. Bake it for 15min at 180-200C/360-400F.

Lemon filling:


  • Juice made out of 2 lemons
  • 3 tablespoons water
  • 120g/4 oz sugar
  • 100g/3.5 oz butter
  • 3 eggs
  • 3 egg yolks
  • Pinch of salt


  1. Prepare the lemon filling on steam.
  2. Pour the water in a bowl and put to boil.
  3. Combine lemon juice, water, sugar, butter and salt in another bowl and put it over the first one without touching the water.
  4. Beat the eggs and egg yolks.
  5. Put one tablespoon of lemon mixture into eggs, mix everything and pour it to the remaining lemon mixture.
  6. Stir the mixture without stopping for about 30 minutes until it thickens.
  7. Leave aside to cools.
  8. Pour the lemon filling into hot dough.



  • 3 egg whites
  • ½ cup vanilla sugar


  1. Beat egg whites.
  2. Add 1/3 sugar and continue to beat.
  3. Add the remaining sugar and beat until the sugar has melted and egg whites are thick.
  4. Put the meringue onto baked cake and return into oven to get the nice brown color.

How to make a perfect meringue for your lemon meringue pie

Meringue is a dessert made of beaten egg whites with sugar.

There are three types of meringue – Italian, French and Swiss meringue.

You can choose any of them, depending on your taste.

Making French meringue is much easier, because it doesn’t require any cooking. This meringue is less sweet and lighter.

Italian meringue, on the other hand has very rich and special taste and it also goes perfectly along with sour lemon filling.

Swiss meringue is something in between those two. Again, it depends on your taste and available time.

Additional advice to make your lemon meringue pie look nicer is to make little waves on top of meringue. Than, put it in the oven or use hand burner to get the nice golden color on top of the pie.

Italian meringue – perfect meringue


  • 180g/6 oz sugar
  • 120ml/4 fl oz water
  • 3 egg whites
  • Pinch of salt


  1. Mix egg whites with salt.
  2. Combine sugar with water in another bowl.
  3. Heat the sugar and water on low temperature until the sugar is melted.
  4. Increase the temperature to let the syrup boil.
  5. Beat the egg whites until they are slightly thick.
  6. Put aside until the syrup is ready.
  7. Cook the syrup until its temperature is 120C/250F or is full of very large bubbles.
  8. Start pouring the syrup into mixed egg whites and continue to mix without stopping.
  9. Mix until the mixture is completely cooled down.

French meringue – simple meringue


  • 3 egg whites
  • 170g/6 oz sugar
  • Pinch of salt


  1. Mix egg whites with salt.
  2. Add sugar gradually and beat the eggs until they are very thick.

Swiss meringue - special meringue


  • 3 egg whites
  • 170g/6 oz sugar


  1. Combine egg whites and sugar in a bowl.
  2. Place the bowl under the double boiler and beat the egg whites and sugar until they are hot (120C/250F).
  3. Remove from heat and continue to beat until the mixture is cool.

Double boiler for perfect lemon meringue pie

This lemon meringue pie recipe is original French recipe and French meringue is used in it. I like to prepare it as it is, because it tastes wonderful and it brings back some wonderful memories.

Of course, you can use Italian meringue recipe as well in this recipe for lemon meringue pie. It will also taste great!
