This recipe was handed down for generations. A simple variation on an old classic. Oven ready noodles, not requiring boiling, cuts down on time, and mess. A variation of Chicken Parmesan, has been included.

Serves six people


  • 1 pound lean ground beef, thawed
  • 1 egg, whole
  • 2 cans hunts tomato sauce, 8 ounce
  • 1 tablespoon Italian seasoning, dried
  • 1 pound mozzarella, shredded
  • 1 16 ounce cottage cheese, small curd
  • 1 teaspoon garlic, powdered
  • pinch black pepper, to taste
  • 1 package lasagna noodles, uncooked oven ready
  • 1 cup parmesan, grated
  • pinch basil, dried


  1. Brown ground beef, until no longer pink. Drain. Return to stove. In the same pan, add tomato sauce, Italian season, garlic, and basil. A pinch of sugar can be added, if the sauce is too tart. Stir, and simmer on low, about 10 minutes.
  2. In a separate bowl. Mix cottage cheese, egg, and parmesan cheese. Sprinkle with a pinch of pepper.
  3. Spray 9x13 pan with coconut oil. Preheat oven to 350 degrees
  4. Layer uncooked noodles, then layer of cottage cheese mix, cover with sauce, sprinkle with mozzarella cheese. Continue to layer, until ingredients are used. Will usually make a 3 layer casserole
  5. Bake in the oven, for 30 minutes. If the top seems to be Browning to quickly, add a layer of aluminum foil.

Put into oven, and cook 30 minutes, at 350 degrees



Chicken parmesan is also an easy, quick dish.

Spray 9x13 pan with coconut oil. Layer battered chicken tenders in dish. Cook for about 30 minutes. While those cook. Prepare the sauce. In a separate bowl, combine 2 cans hunts tomato sauce, Italian seasoning, garlic powder, and a pinch of basil. Add a pinch of sugar it the sauce is too tart. Mix until combined.

In a separate pan, prepare pasta, I prefer whole grain spaghetti, prepare as directed on the package. Cook to your preference.

When chicken is cooked, and no longer pink, remove from oven, top with sauce, sprinkle with parmesan cheese, and grated mozzarella. Return to oven. Cook about 10 minutes, until heated through, and cheese is melted. Serve over pasta, with a side salad.
