KitchenAid Pasta Press And Pasta Roller

KitchenAid Pasta Gadgets - Pasta Press or Pasta Roller Attachment?

Like many other serious cooks, a few years ago, I gave in and bought a KitchenAid Artisan Stand Mixer when I couldn't resist the price at Costco. Now my dilemma is this - do I prefer my old KitchenAid Pasta Roller attachment or would I rather have the KitchenAid Pasta Press attachment I just discovered?(Also known as the Pasta Extruder)

How does each shape up and what is the ease of use with each attachment?

I have been going over the pros and cons for a couple of weeks now since I saw the new Pasta Press attachment advertised at Williams and Sonoma and decided to do some research to try to make my decision before purchasing yet another kitchen gadget!

Thoughts on KitchenAid Pasta Attachments

I can truly speak from experience because I have used the KitchenAid Pasta Roller many times and have made a variety of pasta doughs with it. It's a great little machine. You attach it to the front of the KitchenAid stand mixer and after making the dough, you set it on different settings or add different attachments and make anything from lasagna noodles to spaghetti noodles. I have made various kinds of doughs such as semolina pasta or spinach noodles. There are many delicious recipes for pasta dough that come with the attachments or you can find countless more on the Internet.

You can also buy the Pasta Excellence Kit which is a wee bit pricey but....not only do you get the benefit of making your own pasta you can use the cutters to cut any size dough you like. You can also use the Ravioli Maker to make what else? Ravioli!

The Pasta Press definitely caught my eye on Williams and Sonoma. On looking at the video, for the Pasta Press, I couldn't believe the convenience of making the dough and simply feeding it in by little pieces through the tube. Once you've selected what kind of pasta you want with the appropriate plate, the noodles come out already formed to the right thickness and for that particular noodle. You easily cut to them size with the attached cutter handle.

Again, the Pasta Roller is a great attachment to have for the KitchenAid mixer. It is more labor intensive but then you can make such things as tortillas, lasagna noodles, thin crust pizza dough and perogies.

Then there is of course the Pasta Cutter attachment. Once you have made your dough and rolled it to the desired thickness with the Pasta Roller, you can cut the dough into angel hair pasta or fettucini - or anything in between. This is sold separately or comes as part of the Pasta Excellence Kit!

Coming back to the KitchenAid Pasta Press, this attachment will make 6 different kinds/sizes of pasta noodles already formed. While I would still need my Pasta Roller for making lasagna, I think I would enjoy making pasta noodles quickly with the Pasta Press. The 6 kinds of pasta noodles you can make are:

  • Small macaroni
  • Rigatoni
  • Bucatini
  • Spaghetti
  • Fusilli
  • Large macaroni

First you select your pasta type and then insert the appropriate plate inside the attachment. The attachment comes with 6 plates for the above 6 types of pasta. The plates are stored in a case on top of the pasta attachment. This attachment also comes with a wrench/pusher for the tube, a cleaning brush and complete instructions with recipes for pasta.

Of course, don't forget that you will need pasta drying racks as well! They come in many different varieties and sizes and work really well for the finished product.

Now where was I? Oh yes, comparing the KitchenAid pasta attachments and trying to decide if I should purchase another!

Summing Up KitchenAid Pasta Attachments

You know - after viewing the videos and reading all about all of these attachments, I am in a bit of a pickle! I think I need all of them and that was not what I started out to accomplish here!

However, I did learn more about the Pasta Roller attachment for my KitchenAid mixer which I already have. I also learned about some new things I can make with it such as homemade tortillas!

I also learned that there is a Pasta Excellence Kit that somehow I did not know about (my Pasta Roller was a gift).

I did not know there was a Ravioli Maker! You can of course use the Pasta Roller attachment to make long sheets for ravioli dough and then assemble them on cookie sheets easy enough. I have made ravioli all the away from scratch without a dough roller and it was fabulous homemade!

I also learned that the Pasta Cutter can be used to cut the pasta dough from fettucini size to angel hair size in minutes rather than cutting it by hand! And you can buy it separately without the Ravioli Maker.

And last but not least, I learned more about the Pasta Press that will make 6 different kinds of pasta in perfect shapes such as macaroni, fusilli, and rigatoni. Now if only they had an attachment for farfalle or bow-tie pasta! Hmmm....maybe they will come up with one of these in the future....or I should write and suggest it!

I imagine you can see where I'm going with this. I may not be able to make a choice now and may end up with ALL the pasta attachments. Actually, it would not be a bad investment since I already have the mixer, eh? And I do make pasta regularly such as lasagna, macaroni, fusilli, angel hair and fettucini - so I would have plenty of uses for all my KitchenAid pasta attachments!

I only need more storage space to house all of my attachments!

Whichever KitchenAid attachment you buy though, I have found them to be totally durable, easy to clean and use, and have never had one problem with any of mine.

It is a wonderful invention to have a great mixer and then be able to use it for so many other things, such as kneading bread, making pasta, grinding meat, etc.

In a world of gadgets, I'm thinking KitchenAid kitchen gadgets rock!

Slaquer - you raise some interesting points - I think though from my own experience, you just have to try the pasta recipes....I've even made a well in the flour and then rolled and rolled and rolled - literally from scratch, hung my pasta up and let it dry.

It all has to do with where you live (humidity), the flours that you use (semolina or unbleached) and your machine - or by hand. You just have to decide based on your own expertise and your own environs what tastes the best to you.

Having made everything from cannelloni from scratch (that was the rolling method - oy vey that killed me) - to egg noodles (again with the rolling but not so difficult), then gnocchi and then lasagna with the roller attachment on my mixer...I'd really think that this little spit it out device would be pretty cool.

Everything manmade doesn't mean it's better for us - it just means that it's more convenient and I think globally we've all forgotten how to just get out a bowl and make something. Gadgets and machines are only as good as we the operators make them I suppose, eh?

I'm personally going even further along to be self sufficient and "green" by making everything I can from scratch including bread. It's not that difficult - but you just have to figure out what recipe works for you and where you live I guess!

Most brands of commercial pasta are apparently made with the same flour. I suppose that variations in texture and elasticity result from difference in process. The aging kneading, and consistency of the dough are probably carefully worked out. Some producers will optimize quality, others, something else The home extrusion process will surely require a softer dough than the roller process. Question: can the extrusion process give a product equal to the roller? I don't think we can use the commercial products as a guide because their extrusion presses probably have massive horsepower allowing them great freedom in dough consistency.

So, let's address quality, and put aside convenience for a moment. How to make great pasta, better than Dececco, better than Barilla? Extruder or roller?

I actually have all the pasta attachments you talk about, but I only seem to use the roller set. I have used the extruder press rarely, maybe once when I first got it as a gift. I have used the roller set to make ravioli, fettucine, whole wheat pasta, and even for wonton skins!

The day I made ravioli from scratch (no machines, no nothing) and another day that I made cannelloni - yum - it was SO good I didn't want to eat it! But of course we did! The machines make it a little less time consuming but the finished product is as you say - WONDERFUL!

BJ - Ah yes, Bow-Tie Bombshell just fits the bill....too hilarious on the guys cooking and I believe in equal titles....just because I'm female, can't I be Lord of something...or is that Lordess? And the day I see Bob using my KitchenAid or any other 'equipment' in the kitchen, I may have a heart attack! Although he is a devil with a peeler and he's been known to whip things for me....with a spoon...although come to think of it....ha ha! I always tell him I'd love to see him in an apron though. You gotta keep it spiced up after all!

I can't believe I get suckered in by gadgets though. I do not have enough cupboards to house all my culinary tools is the problem. I use them all so this is good but you know - there is only so much counter space! I need a bigger kitchen - that's it!!
