Key-Lime Meringue Pie
Ingredients
Crust:
- 1 cup flour
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 cup oil
Pie filling:
- 14 ounces sweetened condensed milk
- 4 egg yolks
- 3 ounces key lime juice
For the Meringue:
- 12 egg whites
- 3/4 sugar
- 1/2 teaspoon cream of tarter
I used a simple pie crust: 1 cup of flour, 1/2 teaspoon salt, 1/4 cup oil, 1/4 cup water. Mix with fork.
Put in plastic wrap and squish to the size if your pie plate. Poke with fork. Gently bake for a few minutes until crust looks dry. Set aside.
Bake Crust First - until Dry
The recipe on the bottle was 4 yolks, 1 14 oz can. sweetened condensed milk. After these are mixed, then add the juice.
Bake 350 for 20 minutes. The recipe is on the bottle.
Mix Egg Yolks and Sweetened Condensed Milk
Mix Key Lime Juice with Yolks
Pour into pie shell and bake for 20 minutes.

While the pie is baking, whip the egg whites until they are glossy. Add the cream of tartar, then add the sugar slowly. I added some sugar, whipped it in. Then, repeated that process until my cup of sugar was mixed in.
