Key Lime Bars - Like Pie But in a Square Glass Baking Dish

Made in Three Separate Steps

The graham cracker crust is mixed together and baked.

The filling is made in stages. This recipe is egg yolks only. You will not use the egg whites at all. [my dog was more than happy to eat the whites]

A regular lime was used for the zest. I peeled off a few inches of peel and chopped it up. The egg yolks are then beaten with an egg beater for 5 minutes on high speed. Once beaten, the sweetened condensed milk is then added and mixed in thoroughly. Then, I added the bottle of Key Lime juice, just until it was mixed.

Pour into the prepared shell of graham cracker crust. Bake once again for 20 minutes. Then, let cool and enjoy.

Ingredients

For the Filling - Part One:

  • 6 egg yolks
  • lime zest

For the Filling - Part Two:

  • 2 cans sweetened condensed milk

For the Filling - Part Three:

  • key lime juice

For the Crust:

  • graham crackers, ground
  • 2 sticks melted butter
  • 2/3 cup sugar

The Crust

The crust is mixed and baked first. 350 degrees. 8 minutes. The baked crust is sat aside until the egg mixture is ready.

Grind up crackers. Mix in sugar. Add butter. Stir. Press into glass baking dish. I used a large glass dish and a smaller glass dish.


Bake Crust - Make Filling - Bake Again

I used three packages of crackers, considering the size of my two baking dishes.

Mix Sugar, Graham Cracker Crumbs and Butter Together to Make a Crumble - Put in Baking Dish

Stir into a crumble.

Smoosh into Place With Fingers in a Ziplock Baggie

Egg Yolks and Lime Zest - Mixing Filling Step One

Using an egg separator collect only yolks. Give the egg whites to the dog.

Beat the Egg with the Zest - High Speed for 5 Minutes
