PUNJABI PAYE CHOLEY :

Punjabi Paye choley recipe :

Punjabi paye choley is basically made with (chickpeas and goat or cow totters) it is the most famous breakfast in PUNJAB

First boiled (cow or goat ) totter and chickpeas. Then made masala and cook them together.

  • HOW TO CLEAN TOTTER TO GET RID OF ANY SMELL.

First take totters , add in 1/r cup flour and 4-5 tbsp white vinegar, message them nicely and leave for one hour.
After an hour wash them with water.

HOW TO BOIL TOTTERS :

INGREDIENTS:

  • 800g (goat or cow) totters
  • 2 tablespoon oil
  • Medium size onion
  • Half teaspoon ginger garlic paste

Instruction :

  • Put oil in a pan add 2 tablespoon oil, one medium sized onion, half teaspoon garlic, ginger paste and fry it until it become in light golden color add totters and 2-4 glass water and let it cook until totters become soft.

HOW TO BOIL CHICKPEAS :

  • Half teaspoon baking soda
  • 1 Cinnamon stick
  • Chickpeas 1/2 cup

Instructions :

  • Soak chickpeas over night in water and in morning drain water and add half teaspoon baking soda, big cinnamon stick in water add soaked chickpeas and boil it until nicely soft.

INGREDIENTS :

For masala or gravy :

  • Oil 1/3 cup
  • Garlic paste 1 tbsp
  • Yogurt 1 cup
  • Small cardamom 2-3
  • Cloves 1-2
  • Turmeric powder 1 tsp
  • Red chili powder 1 tbsp
  • Garam masala powder 1 tsp

Instructions :

Put oil in a pan add onion, ginger, garlic paste, cardamom and cloves and fry it for few minutes add tumeric powder chilli powder and garam masala and fry it for few seconds add yogurt and fry it add in totters and , chickpeas add 1/2 cup water cover it and let it cook for 15 minutes.

For Tarka,

  • Oil 1/3 cup
  • Medium size Onion
  • red chili powder 1/2 tsp

Instructions :

Heat up the add chopped onions and red chilli powder and put this oil in totters and chickpeas curry and its done ready to eat.

For garnishing,

  • Fresh coriander
  • Fresh green chili
  • Lemon
  • Fried onion

SERVING : SIX

PREP TIME: ONE HOUR

COOK TIME : HALF HOUR

SERVED WITH : KULCHY, NAAN, OR PARATHA.

Sindhi namkeen allo recipe :

Sindhi namkeen allo ( probably it is salty potatoes with punch of cumin and black pepper)

INGREDIENTS:

  • 2 large sized potatoes
  • 1 teaspoon cumin
  • 2 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 green chillies

Instruction :

Put oil in a pan put cumin and add cubed cut potatoes fry it until potatoes become soft, add salt and pepper mix it well don't burn it and its done .

Cook time : 5 minutes

Served with : roti, paratha or rice.
