Idella's Crisp Biscuits from Cross Creek Cookery by Marjorie Kinnan Rawlings

This bench is easy to construct and is portable. It is an excellent spot to enjoy some cool breezes and hear the sounds of nature.

Once again I found myself transported back to the tiny kitchen at Cross Creek. This time rather than Marjorie's voice walking me through the steps, I felt Idella with me.

Idella Parker was an amazing woman who came to Cross Creek to be Marjorie Kinnan Ralwings' maid. As fate would have it, Idella became much more than a servant to her. I would even go so far as to say she was her confidant and idea I have gleaned from reading of these ladies.

This recipe is Idella's quick, easy recipe for crisp bite-size biscuits. As with a few of the other recipes I have come across, I was a bit skeptical about this recipe But after making them, I am delighted. They are just a great little bit of biscuit heaven.

Where is Cross Creek and why do I care?

Cross Creek is in Alachua County Florida tucked up off highway 301 to the left as you head north.

It was the home of Marjorie K. Rawlings who was an avid writer who gained acknowledgment when her novel, The Yearling, was awarded a Pulitzer prize in 1939.

Marjorie loved to cook probably as much as she loved writing. It may have been away to relax and get away from the stories that were swirling in her mind. Cross Creek Cookery is a collection of her recipes and a number of Cross Creek tales that she had published.

Idella Parker was quite an excellent cook and while she was only given credit for a few of the recipes in the cookbook, she said she had created many others.

Knowing about Cross Creek and those who lived there helped me to understand this collection of recipes and made me care about giving them a try. There are a number of others from the cookbook I have tired and published.

Give these crisp biscuits a try...they will be a pleasant surprise.

Dough Ready to Cut into Tiny Biscuits

Try Some Old Fashioned Southern Biscuits Too

Tiny Little 'biscuit Cutter'

Ingredients

  • 2 cups unbromated, unbleached flour
  • 4 teaspoons baking powder
  • 6 tablespoons Crisco or butter
  • 1/4 cup milk
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 450. Sift flour, baking powder, and salt together.
  2. Using a fork mix again. Cut in Crisco with a fork.
  3. Add milk and combine with your fork.
  4. Roll onto pastry cloth or work area. Handle this dough as little as possible to make a tender, crisp biscuit treat. Roll out to 1/4 inch thickness. Cut into very small rounds.
  5. Bake in hot oven 12 to 15 minutes. Serve hot with butter.
