For Jalebi Batter:
- 1 cup all-purpose flour
- 2 tablespoons corn flour
- 2 tablespoons curd
- 1/8 tablespoon cardamom powder
- 1/8 tablespoon saffron
- 1 tablespoon sugar
- 1 tablespoon yeast
- 3/4 cup lukewarm water
- 2 teaspoons oil
For Sugar Syrup:
- 2.5 cups sugar
- 1.5 water
- 1 tablespoon lemon juice
- 1/2 tablespoon rose water, optional
Step 1) Add 3/4 cup water, 1 tsp sugar, 1 tsp yeast in a bowl and mix.
Step 2) Add all-purpose flour and corn starch to this mixture.
Step 3) Add saffron, curd and cardamom powder. Mix and convert it into a thick batter.
Step 4) Cover and let it settle for 30 minutes.
Step 5) Just 10 minutes before browning, prepare the syrup. For syrup, in a wide saucepan, add sugar + water and mix it for 5 seconds.
Turn the gas to medium-high and heat to the point of boiling. When it starts to bubble, Reduce heat to medium and cook it for 8 minutes. Add lemon juice, rose water at the end and mix it for 5 seconds.
Step 6) After the consistency of the player is right, add 2 spoons of oil and mix.
Step 7) Heat enough oil in a wide shallow pan over medium-high heat (may be for 2 - 3 minutes)
Note -> Oil should be medium hot.
Step 8) Now start putting the batter in circular movement in shape of jalebis. Fry 2 - 3 jalebis at a time. The jalebis will float on the oil and after 25 - 30 seconds or when the shading of the one side has changed, flip them and fry the opposite side for another 25 - 30 seconds..
Step 9) As soon as you take the jalebis out of the oil, soak them in the hot sugar syrup for 20 - 25 seconds (invert them while stirring) and transfer them to a serving dish.
