So this is one of my favorite recipes because every fall we have a bunch of zucchini from our garden and I can make ALOT of zucchini bread! For those of you who have never tried this, I highly recommend it.
3 cups of flour
1 tsp baking soda
1/2 tsp salt
1/2 baking powder
2 tsp cinnamon
2 cups sugar
1 cup vegetable oil
1 tbsp vanilla extract
2 cups grated, unpeeled zucchini
Preheat oven to 350 degrees.
Mix the flour, baking soda, salt, backing powder and cinnamon in a bowl. Combine the eggs, sugar, vegetable oil and vanilla in another mixing bowl, blend well. Add the dry ingredients and zucchini to the creamed mixture, blend well.
Pour them into two greased and floured loaf pans.
Bake for 1 hour and there you have yummy, moist zucchini bread!

I used 1C Splenda granulated and 1/2 C splenda brown sugar blend. Then added 2 scoops protien powder to make it more diabetic friendlier. It came out great. Next time I'll try 1/2 applesauce and half oil also

Diana the reason your cake was not moist is because you used wholewheat flour. just add more liquid next time.

I wasn't thrilled with using as much oil as the recipe called for so I used unsweetened applesauce. It turned out awesome. 2 loaves have been eaten in a matter of a day between my staff and my husband..

Diana, I vary my sugar depending on who I bake for :) everyone in my family likes it sweet. I'm not an expert baker by any means so I'm not sure why yours didn't come out very moist :\ I hope it works out better if you make it again! Sorry I couldn't be more helpful.

Hi I have been wanting to learn how to make zucchini bread for some time now but I always happen to crave it a lot when I pregnant especially with this pregnancy and my last mym I ms friend usually baked me 2 loads he makes from scratch straight firm her garden and it's amazing so I decided to give it a try didn't have high expectations since I'm. It so much. of a baker. As I am a great cooker but let me tell u after it was done baking it really shocked crap out of me it was delicious I could not believe how good it was especially for my 1st time only thing I wish I would've done was to eat it while hot out of the oven but non the less it was delicious my kids loved it I think it was a bit hard on the outside and softer on outside but other then that it was great! Thanks for shrink recipe with us;)

So I found this recipe and made it the same day. I was so excited to make it and see how it turned out. I noticed it contained a lot of sugar which I was worried about and I used whole wheat flour. It turned out yummy except for I think the 2 cups of sugar aren't necessary. It was a bit too sweet for me. I was also a bit disappointed that it wasn't as moist as I was hoping for. I wonder what I did wrong?? Other than that I loved it and will probably add my own twist to it next time! Thank you!
