Kamut is a nutritious unmodified grain that has a pleasing honey-like flavor and an interesting texture. It can be used for making a wholesome breakfast cereal. Try cream of Kamut or cracked Kamut cereal. You can buy the large kernels in a whole foods market and you will need something to crack or grind the grain.

If you would like to try making Kamut cereal, there are a couple of ways to go about this.This article gives instructions for two types of Kamut cereal. Read on for cooking instructions to make cream of Kamut cereal or cracked Kamut cereal.

Freshly-Ground and Nutritionally Sound

If you prefer to grind your grain fresh, prior to use, buy whole Kamut kernels and use a hand-cranked grain grinder, which is good for smaller tasks and can be called on for making freshly ground Kamut flour each time you need it for making cereal. You might prefer this to get the most nutrition from your freshly ground grain.

Another route is to use a grain grinder and grind up larger quantities so that you have your flour on hand. If you have a busy schedule you may prefer to do this. You will still be serving your family a nutritionally-superior breakfast by using organic grain and you'll shave time off by grinding your grain ahead of time.

Why Make Kamut Cereal?

Whatever you decide, choosing to make Kamut cereal one of your breakfast foods can go a long way to increasing and improving nutrition. Why serve a commercially prepared cereal that has sat on shelves for untold months and includes preservatives and chemicals? While these cereals may be fast and convenient, you shortchange your health by consuming nutritionally inferior foods.

Grain Needs to be Finely Ground

If you want to make cream of Kamut cereal, grind your grain fine before proceeding with the steps below, or purchase freshly ground organic Kamut grain. This is basically Kamut flour. You cook this to make a cereal that has the consistency of creamed wheat.

  1. Place 2 cups of water in a small pot. Heat water slightly but do not have it boiling or ground Kamut will clump up.
  2. Using a whisk, stir in 1/2 cup of Kamut flour. Add flour gradually in small amounts so that lumps don't form.
  3. If small lumps occur, keep stirring to break up the ground grain
  4. Continue to cook and stir about 5 minutes, until your cereal is cooked.

Cereal will be watery, at first, but will thicken as it cooks and take on the consistency of creamed cereal.

Even if you end up with a few small lumps, these will not detract from your cereal. It takes a couple of times to get a feel for how to make this cereal. I find the best method is to stir flour in water before it boils.

Cereal Consistency

Add more water for a thinner cereal or, if a thicker cereal is preferred, continue cooking on low heat.

Serving suggestion:

Remove from heat and scoop cooked cereal out into a bowl. Add in nuts and ground flax seeds. Top with almond cream, a wonderful, dairy-free topper for cereal.

Cracked Kamut Cereal

Kernels Are Cracked Prior to Cooking

Another way to make Kamut cereal is to actually crack the grain prior to cooking it. To make a cracked cereal, you will need a Vita-Mix. With this method you do not actually grind your grain into a flour, instead you crack the kernel. This makes for a denser, chewier cereal.

  1. Pour 1/2 cup of Kamut kernels into a Vita-Mix and follow instructions for cracking grain.
  2. Cook the cracked Kamut grain in 2 cups of lightly boiling water.
  3. Cracked Kamut cereal will take longer to cook.
  4. Stir frequently.

Serve with fresh fruit and top your cereal with honey and almond cream.

I bought a Vitamix so that I could crack and grind grain and found it a great aid, not only for making cereals but for so many other dishes. Being able to grind different grains for cereals and breads has helped me to bump up nutrition. I like that I can grind a grain for a wholesome cereal or grind flour and then mix up batter right in the Vitamix for pancakes, muffins and more.

A more fool-proof way to prevent clumping would be to make a paste of the kamut flour before adding it to hot/boiling water. Add just enough water to make this paste pourable and stir the boiling water with one hand as you pour the paste in with the other.

This tastes very creamy and is very easy to make. If you like it thicker, use less water. you can always add more liquid, if needed.

I am going to try this - thanks for the idea and recipe! I recently tried soft wheat berries but they weren't really porridgey enough for me in the morning. I think this will be, though :)
