How to Make Corn Syrup Substitute

You can use this recipe for any corn syrup substitutions, even hard candy. It's also really good for people who suffer with corn allergies as well. If you prefer a dark(er) corn syrup, just use light or dark brown sugar instead of the white sugar called for in this recipe.

Ingredients:

3/4 cup of room temperature water

2 cup of sugar of your choosing

Salt, just a pinch

1/4 tsp. cream of tarter (optional)

Mix all the above ingredients in a 2 quart sauce pan. You want to bring it to a boil, do not stop stirring while it is coming to a boil. Once you've reached the boiling stage attach a candy thermometer, stop stirring, and continue to boil until the thermometer reaches 230 degrees. Now just remove it from the heat and store in a jar.

But if the majority of white sugar also comes from GMO sources (sugar beets, et al), what would be the difference?

thanks for this - corn syrup has had rather a bad press because of obesity issues, but this sounds to be a really good substitute - will certainly give it a try - thanks Deborah Fantasia.
