Freezing Raw Eggs
Freezing raw eggs is a very simple and affordable way to preserve them for later use. Once thawed, these eggs can be used just like fresh raw eggs and are GREAT for using in a recipe or preparing scrambled eggs and omelettes for you and your family to enjoy.
1 Muffin pan
1 Dozen washed eggs
1 Gallon sized zip-lock freezer bag per dozen eggs being frozen.
Take the clean muffin pan and break one egg into each of the cups. There is no need to spray anything, such as a non-stick cooking spray, into the pan prior to this step
Place the muffin pan into your freezer. Make sure it is sitting completely flat and level during the freezing process and flash freeze the eggs until solid.
Remove the frozen eggs from the muffin tin (if they seem a little stuck to the tin, just set the whole muffin pan into a warm bath for about a minute or two and they will loosen up).
Place your frozen eggs into the gallon sized zip-lock freezer bag and label with name and date using a sharpie pen.
Put the freezer bag back into your freezer until ready to use.
That's all there is to freezing raw eggs for later use... I have done this MANY times and the eggs once thawed for use taste and work exactly like they would straight out of the shells.

Wow I will try this! I use coconut oil on mine and it is said to last almost a year that way but I like the idea of freezing some since I have a few hens and sometimes get too many even sharing them.
