I have enjoyed creating food and perfecting recipes in the kitchen since I was 10 years old. I prefer homemade over store-bought.

Before I lived in Virginia, I had never heard of Corn Pudding. At first, the thought of corn in pudding sounded very odd. But once I tried it, I was delighted to know that it really does taste good! It uses creamed corn, which is sweet and creamy in itself. Add the rest of the ingredients, and it is a treat for your tastebuds.

Years ago, a friend of mine had some of this corn pudding while at work. A co-worker of his brought it to share, and my friend liked it so much that he got the recipe from her. I ended up with it, and made it many times over the years. Once I moved up North several years ago, the recipe got shuffled away, and it wasn't until I was going through my recipes a few weeks ago that I rediscovered it. I made it, and it brought back lots of memories.

Corn Pudding

Preparation: 5 minutes

Cook Time: 45-60 minutes

Yield: About 3 1/2 cups, 3 servings of just over 1 cup each

Ingredients

  • 1/2-3/4 cup sugar
  • 3 Tablespoons flour
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup milk
  • 1 can (about 14.75 oz) cream style corn
  • 1 teaspoon vanilla extract, (optional)
  • 1 teaspoon cinnamon, (optional)

Directions

  1. Preheat oven to 350 degrees
  2. Mix all ingredients together in a casserole dish (or any other oven-proof dish)
  3. Cook for 45 minutes to 1 hour, approximately. It is done once it is fairly solid and thick. If it still looks a little milky, it may look fine once you take it out and let it sit for a few minutes. But if it is still too watery in the center, leave in the oven for another 10-15 minutes

I love corn but I have never made a corn pudding. It is not very common here in Germany. But there are many German recipes translated from American ones. Very nice recipe.

This recipe would have even more stains, except at one point I copied the recipe into a mini cookbook that has blank pages to fill. I don't think I have it anymore, and this recipe copy is so much more nostalgic to me.

I think taking photos is one of the most fun parts of getting the article ready. A recipe can just be a grouping of words unless you have an idea of what it looks like. There are so many recipes on HubPages (and many spectacular ones!), and I want to stand out a little. I'm glad you like! Other than that, finding photos online that resemble my recipes would take longer than actually taking photos myself.

Bill, this recipe is incredibly simple! It took longer than normal to cook last time, but I am patient. I ended up serving it as dessert, rather than with the meal, because I didn't want Andy to have to wait, and be hungry! For supper I made chicken with garlic powder, hot sauce, and freshly ground black peppercorn, with delicious butternut squash and kidney beans on the side.

By the way, I still have a hub on creating several meals out of "one meal" in mind, like I mentioned to you a while ago. I have all sorts of pictures, I just need to compile them, and decide which way to go with it. I love meal planning, and cooking extra one day, using leftovers other days to create new and tasty meals.

Well, I have heard of it but I've never had it...unless my Iowa relatives fed it to me when I was a youngster and I don't remember. The recipe seems simple enough. Maybe it's about time I take this off of my bucket list. :)
