Just A Thought

Living in the Philippines for a few months means eating three times rice a day. Breakfast, lunch and dinner. Although I am not force to do so, I am still tempted to join my relatives eating meals with rice. It is hard to ignore those delicious food which I have been longing for, for many years while living in Germany. Foods that are so inviting to me. I could not refuse to eat when the food is all about vegetables like Camote tops, Kangkong (water spinach), Malunggay leaves and Papaya cooked in coconut milk. As well as I could not refuse when there are fresh fruits serve on the table like mangoes, bananas, jackfruits and all those tropical fruits that are on season.

Well, maybe this is not special to you my friends here on HubPages but for me, yes. Just imagine, you will go to a foreign country. Will you not be missing something? A soda bread and a pint of Guinness for an Irish man, a Rye bread and a Bratwurst (German sausage) for a German, a Gouda cheese for a Dutch man or a real cup of black tea with milk for an English man? You will believe me or not: I am missing these food I mention above here in the Philippines. How I wish I can buy a pint of Guinness when I am so thirsty lying here on the beach sunbathing!

I am fond of eating vegetables that my father is sometimes scared when I am at home because he does not like vegetables a lot. He even baptized me as " an eating grass Filipino." Of course he was just joking. To tell you the truth, he is right.

Well, eating fruits and vegetables is very good to my health. But the quantity that I am eating with rice every meals are huge that I am planning to reduce my weight for the first time in my life. I will be on diet! But before that, here is my fried rice recipe from my leftover from my last nights dinner.

Serves 4-6 persons

Yummy Fried Rice!

Ingredients

A wok, electric wok or a frying pan

Oil

A few cloves smashed garlic

Tomato cut in cubes

1 onion, cut in cubes

2 cups of cooked leftover rice

1 cup of bacon in stripes (optional)

1 cup of longganisa or any sausages you like

1 cup green peas or cut fresh leeks if available

1 cup of fresh mushrooms if available, if not a canned mushrooms will do

2 well beaten eggs

soy sauce

salt and pepper to taste

spring onions cut for decoration

Procedure:

  1. Heat the oil in the Wok or a frying pan.
  2. Fry the bacon or longganisa (or both) and cut into pieces when it's cold. Set aside.
  3. Sauté the garlic, cut tomatoes and dice onions.
  4. Add the bacon stripes and cut Longanisa into the frying pan. Mix well as it might easily get burned.
  5. Add the fresh mushrooms and the canned peas or fresh leeks.
  6. Add the leftover rice into the frying pan.
  7. Pour the well beaten eggs on top of the rice mixture. Mix well. Wait until it is done.
  8. Season with soy sauce, salt and pepper to taste.
  9. Add the cut spring onions on top.

You can eat this recipe for your breakfast or at any time you would love to. It is a comfort food for me and it is a change from just eating a plain rice meal menu. I usually make this fried rice when I have a visitor and you can serve this cold during summer time with salad when you are having your barbecue. Enjoy your meal!

These are only some of the ingredients you can use in making your leftover rice. I´ll add some more if I can think of something else I have used before.

Tips on making fried rice:

  1. If you have no leftover rice, you can cook rice a few hours before cooking.
  2. If you have leftover meat like pork, chicken or beef, you can add this too in your fried rice. Just cut it in small pieces like into small cubes. Chunk chicken will do as well.
  3. It's up to you what veggies you prefer to use and you can do it by asking the member of your family what veggies they would like to have.

Hi Hilary Hsieh. Really? I have always use tomato when stir frying and making fried rice. No, it doesn´t make the fried rice soggy. My fried rice has a lot of variations as it depends of what kind of veggies and meat I have in the fridge. Hello! This is quite the interesting recipe. I have never seen tomatoes used in fried rice before. Won't they produce a lot of juice and make the rice soggy? Personally, I make my fried rice with onion, peas, carrots, diced meat, eggs, and soy sauce.

I can imagine missing the foods one grew up on, especially the foods that became comfort foods because they remind one of home. Not to enjoy them for a long period of time would make a new location seem even less like home. I'm glad you got to go visit home for a while and enjoy all the foods you missed.

Living with a Khmer (Cambodian) wife, I eat rice almost every day! Fried Rice in Khmer is called "Bai Cha" and we often use left over (whatever that means!) rice.
