So, you stumbled upon this article because you like mangos, and you love dried chilli mangos (achari) right? But now you want to make it yourself. So, it is simple. You are going to learn how to make the snack yourself at home. 24 green mangos, chilli powder and granulated sugar are all that you are going to need for this snack- an oven and a baking tray. - Red Chilli Powder to taste
- Granulated Sugar to taste
One of the best snacks that I have become accustomed to. The mangos are dried in the oven with heaps of chilli and sugar added to give them a very unique flavour. They are sweet, sour and spicy all at the same time. Ironically, they are also healthy- but given the sugar content added, a little bit of a sugary treat too- so both good and bad for you at the same time!
I love this snack and my guess is that the ones that I’ve been eating from the store have been dried in the sun. However, when I had the opportunity to make this myself at home with a bunch of green mangos I had in the fridge I figured that oven drying was a lot faster and easier than having to troll out in the sun.
The Process- Easy as 1,2,3
So, anyhow I had a huge batch of green mangos and I took 24 of them, peeled them and sliced them into small pieces. I took an oven tray and laid them all out onto it. I then added red chilli powder, and sprinkled it all over the mangos on the tray.
I placed them into the oven at 175 degrees for four hours and kept a close eye on them. The mangos were then very dried out and I left them inside the oven even after it was switched off for a further 2 hours to get dry, hot air. Then, after 6 hours removed them from the oven and sprinkled white sugar over them.
Tip( Don't sprinkle sugar on them before they go in the oven)
Now, it was tempting to sprinkle sugar on the mangos at the beginning, but instinct and common sense from having had past culinary adventures in the kitchen told me that if I would have done this, the sugar would have caramelised and eventually burned as 4 hours in an oven for sugar is way too much. If you know any different please do comment and let me know! Anyhow, I'm sharing some pictures with you in the hope that if anyone wants to attempt to make this snack it will be easier for them, than what it was for me.
Also, please do make sure to note that when you dry foods out in the oven- it is always a good idea not to close the lid of the container that you are storing them in for the night. The reason is that some liquid may still be present and you will give them a chance to be dried out fully overnight. They always look better the next day for some reason- and taste better too.
