Breakfast made Simple with Holy Eggs

I remember growing up as a child when my mother would make this quick and simple breakfast, she said it was the easiest way to get us kids out the door in time for the school bus and still eat the most important meal of the day.

I have always known this breakfast recipe using only three simple ingredients as “Holy Eggs“, it wasn’t until recently that I learnt this breakfast egg dish has close to seventy five other names that people call it, so you might have another name for this simple breakfast.

You might even call it something else in your family, listed are just a few of my favourite names for this easy to make breakfast maybe you recognize one or two.

  • Camel’s Eye, Toad in the Hole, Eye Openers, Hole in One, Pothole Eggs, One Eyed Gypsy, Bird’s Nest and Popeye Eggs

Not to often you come across a simple and easy dish to make with only three ingredients, what was my mother thinking. For the longest time while growing up I actually thought that my mother had made up this recipe and that we were the only family that ate it for breakfast, what was I thinking!

When I became an adult and had children of my own I too made this breakfast dish for them, in fact because it’s so easy to make this was the first dish I taught my kids how to make when I thought the time was right for them to learn to cook.

My Family Grew up on this Holy Egg Recipe

All You Need is Three Ingredients, One Knife, One Spatula and One Skillet!

Moving along to my mother’s breakfast recipe which is featured below, I will show you how to make these for your family's sit down meal and you will have them out of the kitchen in no time at all.

I like to eat mine a little more on the darker side, the egg inside is cooked so that the yolk is still a bit on the runny side which makes the grilled toast even that much better as I dip into the egg. Since you make these exactly like you would a grill cheese sandwich the darkness is a personal choice, just know that the egg will always be on the runny side (but cooked).

Ingredients

  • 2 eggs, brown or white
  • 1 tsp, butter
  • 2 slices of bread, brown or white

Cooking Instructions

  1. Butter both sides of the bread evenly
  2. Using the butter knife cut a hole in the center of the bread
  3. Place into a heated frying pan with either side down
  4. Crack open one of the eggs and put in the center hole of one slice of bread, repeat with the second slice of bread
  5. Cook until the bread on the bottom of the pan is dark like a piece of toast
  6. Flip it over like you would a grill cheese sandwich and repeat step 5 for the remaining side of the bread

This is an easy dish for children, when it's time for them to learn how to cook.

What do you do with those little circles of bread you just cut out?

I’ve been asked this question many times over my lifetime and the answer always remains the same, first I don’t see any point in wasting food not even the smallest amount.

I take the buttered circle and fry it up along side the eggs toasting in the bread. Then when I’m eating my breakfast I either add a small amount of jam, honey or peanut butter on one side and pop it in my mouth, it’s like a smaller scale of toast.

An added bonus depending on the size of your family, clean up will be a breeze after everyone eats just throw everything in the dishwasher and your off to enjoy the day.
