Let's dive into the exciting world of spices. What makes spices so exciting? They allow us to be creative and adventurous in our cooking and best of all, they prevent us from eating another flavourless bland meal. Spices serve numerous purposes in cooking and can be used.

So it's a good time to bust out those spices that are hiding in your cupboard, and get ready to jet set into the hot and peppery world of spices.
As per my culinary skills and practice, I can sum up three basic functions of spices in our preparation. A right quantity and proportion can just give that Uber chic quotient to any simple or bland dish. The foremost key role that the spices play are:
Enhances Flavour and Aroma
Spices can definitely play a key role in enhancing the range of flavours,be it rendering the dish a hint of sweetness or to Kick on the heat in the dish. Aroma is one of the role player as it decides and tickles our senses that decides whether to savour the dish or ignore the dish.
Enhances The Taste
Spices not only provide the required taste but also enhances the taste of other ingredients present in the dish. Salt eliminates the blandness but a dash of Cummin or cinnamon can increase the overall flavour of the dish.
Enhances And Changes The Colour
Spices beautifully enhance the sight of the dish. For ages Indian kitchen uses dash of turmeric to give that distinct yellow colour or orange colour to their recipes, a significant look of most Indian dishes.Same way a pinch of paprika provides that perfect look to the Mediterranean style onion soup.
2 tablespoons ground paprika
1 tablespoon smoked paprika
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground turmeric
2 teaspoons ground ginger
1.5 teaspoons chili powder
2.5 teaspoons Garam Masala
1/4 cup + 1 tablespoon chili powder
1/4 cup + 1 tablespoon ground cumin
1 tablespoon + 2 teaspoons fine sea salt
1 tablespoon + 2 teaspoons ground black pepper
2-1/2 teaspoons cayenne pepper
2-1/2 teaspoons onion powder
2-1/2 teaspoons garlic powder
2-1/2 teaspoons paprika
1-1/4 teaspoons oregano
Za'atar Mix(Middle East)
1 tbsp whole cumin seeds
1 tbsp whole coriander seeds
2 tbsp fresh thyme, chopped
1 tbsp sumac
1 tsp sea or kosher salt
2 tbsp sesame seeds
Adobo Mix( Spanish and Mexican blend)
Wet seasoning – use this adobo mix in a wet seasoning or a marinade.
1/2 cup adobo seasoning
1/4 cup of lemon juice
1/4 cup of white wine vinegar
3/4 cup of fresh orange juice
1/4 cup of olive oil
1 small onion
1 tablespoon dried oregano
pinch of brown sugar (when the taste is bitter)
1 tablespoon cumin (optional)
1 tablespoon lemon juice (optional)
1 Tablespoon basil
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon rosemary
½ Tablespoon red pepper flakes for heat*
2 tablespoons granulate dry garlic
½ teaspoon fine sea salt
If desired you may also add 1.5 teaspoon of dried parsley.
2 tablespoons brown sugar
4 teaspoons paprika
4 teaspoons cumin
2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon salt
2 teaspoons pepper
1/2 teaspoon cayenne (or more to taste)
All these mixes can be stored in an air tight mason jar for months.
